Basil, Parsley and Mint Pesto Recipe:
Prep Time: 15 minutes
Ingredients (makes 1 cup):
¾ cup (185 ml) packed basil leaves, washed and dry
¼ cup (65 ml) packed parsley leaves, washed and dry
1 tbsp (15 ml) packed mint leaves, washed and dry
1 tbsp (15 ml) slivered almonds or pine nuts
½ tbsp (7 ml) minced garlic
½ tsp (2 ml) salt
¼ tsp (1 ml) ground black pepper
¾ cup (185 ml) extra virgin olive oil
¼ cup (60 ml) grated Romano cheese
Pesto alla Genovese Recipe (with Basil):
Prep Time: 15 minutes
Ingredients (makes 1 cup):
1 cup (250 mL) basil leaves, washed, drained and tightly packed
¾ cup (185 mL) extra virgin olive oil
1 Tbsp (15 mL) pine nuts
½ Tbsp (8 mL) minced garlic
½ tsp (2 mL) salt
¼ tsp (1 mL) ground black pepper
¼ cup (60 mL) grated Romano or Parmesan cheese
