Beautiful, hearty recipe! Just a suggestion -- instead of sugar or baking soda to cut the acid of your tomato sauce, add a pinch of cinnamon. That was the secret ingredient my Southern Italian and Sicilian aunts used, and their tomato sauce was the best on earth -- it adds a slight sweetness, fragrance and depth.

Albert nails it again. Cooked this here in the UK using Fiorelli Pasta from M&S and boy was it superb. My wife (who to be honest isn't really a big fan of pasta dishes), absolutely loved it. Estupendo Albert.

Looks totally yum. I will make this soon and will also put two bottle anchovies in the sauce for an added lift of flavour. You don’t taste the the anchovies but it is a trick passed down to me from an old Italian who’s red sauces were total delights. Great one, Albert. Cheers🦘👨🍳🎶🇦🇺
I usually mince the garlic, but 8 gloves minced might make it too garlicky. I know sliced is less flavour than minced, but I'm curious to try it out and see how this aspect affects the dish.
