Thank you so much for this challenge! I’m so glad you still show so much with canning. So many homesteaders are converting to mainly freeze drying and that’s just not an option for so many of us!
I don’t watch those. I follow so many people I enjoy, but when they start that freeze drying, I don’t watch. It doesn’t apply to me. It makes me mad actually, because..you said it…it’s not an option. Why bother watching? I’ll never freeze dry bc I can’t afford it.
I live in the UK and I bought a pressure canner two weeks ago and started using it pretty much straight away. Already the jars are building up even though it’s a much scaled down version of what you do. I’m loving it and really want to thank you for these videos. I’ve learned so much. Although I came to the challenge late I’ve tried to preserve something each day. I hear your voice. “It’s x jars we didn’t have…. “. Brilliant!
And another canning addict joins us-welcome to the beautiful madness! 😂. I adore canning and I’m always happy to hear another person taking the leap into do it as well. 😊😊
241 jars of food for the shelves, many seeds saved, lots of things dehydrated from peppers to soup veggies to herbs, and a handful of things frozen intentionally. This was a great month, Jessica! Thank you for hosting again!! :) I'm completely impressed by how much can get done in one month.
Jessica, I want to thank you for inspiring me to continue to fill my shelves to feed my family over the winter. During this month, I've also been working on cooking through the beef from my last 1/2 cow purchased a year ago. This morning, I have a brisket in the oven roasting. I've never cooked one before, so this is a new challenge for me. My next 1/2 pig and 1/2 cow arrive in November, and I need to make space. To that end, I've been canning products I typically would have frozen. Each time my nephew stops by, he opens the dishwasher to discover how many jars I've emptied this week because I needed something else to go with what I was cooking. I have a large quantity of tomatoes I was gifted that I cored and scored which will get roasted next week, run through the food mill and cooked down with peppers and onions to make pasta sauce for the winter. We had cooler weather this week, so I made a batch of chili. Dear nephew said he didn't have the energy to visit, so I told him to come, pack up the chili and take it home with him. I ended up with only four servings for myself, but that means I'll be more likely to make another batch. Cooking and eating alone is a challenge I don't wish on anyone. I still cook the way I did when my three sons were living at home and teenagers - there's always too much left over! I have three projects ahead of me for the upcoming week, including canning potatoes, canning carrots and cooking down the pasta sauce. If I have any jars left over, I have dried beans that need to go on the shelves. While they will keep as dried beans, they are much more convenient when they are ready to use!
I just asked a neighbor what they do with their pears from their tree. It’s loaded down! They said they give them away if anyone wants them! I asked if I could have some and they said to take as many as I wanted! Thank you for sharing your knowledge ❤
This year, I have canned more then I have ever before in the month of August 409 jars for my family. Not counting what I had on my shelf’s from the beginning of summer or what was leftover from last year. And I’m not done yet! I have a bushel of tomatoes sitting in my dinning room, plus pears and apples haven’t came in yet, and whatever else I get from the garden before the 1st frost. So thankful for you and your inspiration.
Thank you! I learn so much from you! My mom has 2 little apple trees and we canned apple pie jam, filling, apple butter, and made apple scrap vinegar. I feel more confident doing more of these things from watching you. 🥰
Good morning! This video couldn't have come at a better time, as our pear tree is loaded this year. As I've been preserving, I've wondered, "what would Jessica do with all of these pears?" I now know the answer. And am glad to see that you jar up your slices with the skin on. Can't wait to try that method. And some pear cobbler come winter. Thank you for another wonderful video.
I loved apple butter as a kid. These days, it’s hard to come by unless you make it yourself. Beautiful accomplishment! Those jars are beautiful to see.
We do the crockpot apple butter every year. That's the only way we have done it for 5 years. I was freezing so I wouldn't have to can. Last year we decided to free up the freezer and canned them, so good!@@sharongriffith7505
Devotions/spending time with God and my Sunday Jessica fix is a great way to start my week! I hear you in my head, what would Jessica do with all these things. Thank you for continuing to encourage, educate and love all of us out here trying to take care of our family and live a wholesome life! You’re truly a blessing! Have a blessed day my friend!❤😊
❤ Good Morning !!! I always enjoy your videos so much. This month was very hard for me I had a lot of health issues. Because of the everybitcounts it kept me going.
I’m another UK viewer. I’ve been doing my version of this challenge (even through a bout of Covid). I’ve found your channel to be such an inspiration nd blessing, and I’ve got a lot of recipe suggestions from it. Thank you for sharing with us.
Your videos are so inspiring! Watching todays video brought back many fond memories of my Grandmother. She did mostly small batch canning and never wasted anything and there was nothing like opening a jar of something she had prepared. So thank you for sharing and for inspiring us think of ways we can make better use of the bounty at this time of year. Also for reminding us that even if we can't do a lot, we can do a little and sometimes that makes all the difference.
YOU. ARE. AMAZING!!! How do you do all this?!! I bought a pressure canner for myself for Christmas and still have yet to can one thing. I have jar's, lid's, ring's, gallon's of vinegar, pound's of salt... and a terrible fear I will do something wrong! Were you ever scared you might not do something correctly and make your family sick? My mom got blown into a wall across the room from the pressure canner...I signed off canning at that moment. As a child you don't forget those things. Please tell me there are safeguards in place to keep this from happening now. It took me a couple of YEARS to work up the courage to purchase a canner. You make it look so easy, almost effortless, although I DO KNOW YOU ARE AN INCREDIBLY HARD WORKING WOMAN!! You are such a blessing to so many of us. Thank you for encouraging us to at least think about, consider and maybe even try canning. Thank you.
I love spending my Sunday morning with you! We have just had a new food challenge placed in our lap as our youngest son, in his 20’s, and is living at home right now, was just diagnosed with type 1 diabetes. We are going to be having to use our imaginations with cooking!
I've watched many, many Homesteaders doing the challenge. What a joy!❤❤❤ THANK YOU 💙 Nurse Judi in Scottsdale AZ and Eucharistic Minister. God bless you 🙏🏻 ❤️
I made it! This was my first year I preserved things every day! Thank you for hosting this wonderful challenge. My pantry is looking good and should be able to make the Jan-Feb challenge.
Usually i have to wait until September to do your challenge but this year our weather was amazing so I was able to start at the beginning! I kept track every day of what I did and added it up at the end. Holy Moly! The numbers I put up shocked me because it was a little at a time. Thanks so much for sharing with us! I so enjoyed this year!
We are finishing up on our 4 bushels of pears this week. We may be able to get 10-15 more gallons this weekend off the tree before it’s too late. I made salted caramel pear butter, spiced pear slices, vanilla pear sauce, chai spiced pear halves, pears with pineapple in homemade spiced rum vanilla extract with a little brown sugar. I used pineapple I cut up and froze when I got them for 60 cents each a couple of months ago. I don’t cut off the pear peels either. I’m canning simple pear slices today and more of the salted caramel butter.
Everything looks wonderful! I didn’t preserve every day, but I did much more than usual thanks to this challenge. Thanks for the encouragement, Jessica!
My favorite aunt used to make peach/pear jam! It was my favorite. Although I do love blueberry/cherry as well. Always a JOY to watch your channel! You are an amazing mother and wife…..BLESSED ♥️
Glad I found you 🤩. I’m 4+ yrs post TBI & have not been able to do things I did before. My son started helping me with prepping fruit & so far so good. I can’t believe people have fruit trees & just let it fall to the ground 😖 I’m working on pears & nectarines so your video was very encouraging for me. 👵🏻👩🌾❣️
I didn't do something everyday, but I ran out of pint canning jars yesterday and had to run to dollar general and get more. I've canned some new things this year. Some we loved and some we said never again. Still not done. Lots of tomatoes still in freezer and in the garden.
Love to seeing your videos , you are the so darling sweet and a really good mother wife and teacher 🙏 to your childern and us youtube follovers . Iam from Sweden so my spelling is not to good 😂 . I can talk English but spell it 😂😂. Here in Sweden we dont can anyting in pressur canning , lost the knowlig howto over the years i think. Frees drying you cant by a freesdryer. That wolud be a nice thing to have. Bless you and your family.
I made pear/raisin mince meat pie filling and it was amazing. We have it during the holidays . I have a few relatives that love this so I canned an extra batch and gave them out at Christmas.
I am just so impressed at how much food you grew and processed for you and your family! God has been good to your family, and you in turn have been good to share your know-how and experience. Hopefully someday those watching can share their experience, that you taught to them, to their children. What a healthy and self-sustaining thing to do!
Thank you, Jessica! I put up so much food, and I feel confident in my skills now to continue putting up the rest of the harvest. It's been nice to listen to others doing the same thing while I work and you all have so many great ideas for me to try. ❤
Good Morning Jessica! I bought and used Pomona pectin for the first time and it was amazing to see how well it jelled! I found frozen blueberries and raspberries in the deep freeze that were hidden at the bottom and I made jam. I also found some frozen cranberries so yesterday I made cranberry juice but I added 1/4 cp of sugar to each quart and processed them longer. We’re opening one this morning. God Bless!
Thank you for the hard work and dedication that went into making these videos. I canned 43 jars of tomato products yesterday. I attribute that to your inspiration. 🇨🇦
I tried that pear cranberry ginger conserve recipe too and it was SO delightful and dicious. I used dried cranberry but I wish I had thought to toss in a handful of fresh frozen cranberries I had leftover..... You have to try the pear cardamom pie filling. It's SO yummy. Makes 4 pints. Such a treat. I have been so enjoying that recipe book!
Good morning Jessica and beautiful family! Thanks to your videos, I am learning how to preserve fresh food! Thank you so much for all of the videos! Thank you for teaching us how to do food preservation! Much love and God bless! All the way from Augusta Georgia ❤❤❤❤❤❤❤❤❤❤❤
New subscriber here..love the different methods. I also use the cores to make vinegars. I have six pear trees of different varieties I'm not sure of one as grandpa planted it. My favorite methods are canning, drying and pickling my foods...so glad I discovered your videos...nice to see someone down to earth. Basic preserving simple recipes.
Wow! August was a very busy month for a very busy mom. Thank you for allowing us to learn from the knowledge you have acquired through the years. Have a wonderful week!
I got pears from a coworker and canned 6 pints of pear pieces yesterday along with a scant 1/2 pint jar of the leftover syrup. I simmered it with a cinnamon stick and a dash of vanilla. Hopefully it will be tasty!! I’m doing more tomato soup today. I let my celery go too long so I salvaged what I could of the leaves snd air dried them in a brown paper bag and preserved a 1/2 pint of dried celery leaves to add to soups/stews. I have more growing so hopefully I’ll be more on top of the next batch. As I told you last week, I have the nesco electric pressure canner which is great for small batches. I drive by a pear tree on a strip of ground between the Pa turnpike and a township road. I want to stop and pick the pears so they don’t go yo waste but 1. I’m worried I’ll get hit by a car 2. I’m worried someone I know will see me and think I’m crazy 3. I need a fruit picking basket 4. I’m the only one who eats canned pears and it’s just me and my daughter at home…how much food do I need?? I’m running out of room!! My husband stays with his mom (who has early dementia)in ohio and I drive there nearly every weekend to see and spend time with him. I have a daughter and son in law with 2 young (2.5 yrs and 8 months) girls very close who I share my canned food with as well. Love and blessings to you and your family and to all of your viewers ❤️
Have someone drop you off & pick you up to get the pears, don't want to get hurt. Get as much food as you can get..have your children furnish jars for you!
My peach scrap vinegar is amazing!! I started a batch of pear scrap vinegar yesterday!! I use ph strips to check it. When I did my first batch of peach scrap vinegar, I accidentally left the scraps in for the whole month. It turned out great so I did it with the second batch too. I’m going to do the same with my pear scrap vinegar. Now I just need to figure out what to do with all my vinegars!!😂 I used my chive vinegar to make a dressing for my cucumber salad and on my tomatoes. My chive vinegar is delicious too. It’s so much fun to experiment with all of this food.
Thank you! Your videos are always so timely: just received two boxes of pears from a neighbour and have been looking at them and wondering what to make. Now I know!
My mother shared your channel with me and I love watching your different videos you have.. especially this one! I have a mulberry tree in my yard and my peach tree blossomed for the first time last year! The dang bugs got to my peaches before I could.. i was so upset! I definitely want to try doing a pear jelly- that would be good. I did my first mulberry jelly last year and it was delish!
Jessica you are amazing!!! I get excited on Sundays when your new video comes out. I read your title and I told my husband I can’t wait to watch your updates. Your family are so blessed to have you as their teacher and mentor. Your family is so blessed. So happy your health has came back good. You give your all to your family. It shows. So happy you all our a part of our lives. May the Most High bless you and keep you in Jesus name. Amen!
Wow, you are amazing!! I just found your channel and thoroughly enjoyed watching this video, thank you for sharing your talent!! I don't have a mom or grandma to learn this stuff from so you really are a blessing!!
I just loved this video! I’m working in pairs and googled Canning pairs and you popped up. You have inspired me to make apple scrap jelly and pear conserve. Thank you so much.
Thank you! My pear tree is suddenly producing more than we can eat fresh and these are all fabulous ideas for canning. Can't wait to try some. Your challenge is one of the best preserving groups out there!
How the heck is it September already? You always share the best recipes; some new to me , some I had completely forgotten. The pear conserve is one I used to make with our pears and pineapple. We had 3 pear trees; the yield was never huge but I loved making the conserve . They were often given as Christmas gifts. Thank you for always giving us new options and restoring old memories. I loved seeing a little hand extracting a pear slice as you worked. Have a great Labor Day weekend. Big hugs.
Is the mother the same as a scuby for kombucha this is all new to me but would like to try it thanks I look forward to your videos. All the ideas you give me thank you so much.
You have inspired me to persevere as much as I can. Every year I get more in the pantry which we expanded last winter. It gives me such joy to see the shelf stable foods to feed into the next year. I feel prepared, and I know my food is organic and I can share with my adult children if hard times come.
Coming back and watching again, I get 2 bushels of pears this week. I am so excited! I want to preserve every bit possible. I don't have a freeze dryer yet so it will have to be canning this year.
Jessica, I am amazed at your hard work and dedication to this project. I have very much enjoyed this entire collaboration and hate to see it end. Thank you for sharing and for teaching many of us to get out there and try new things. I look forward to seeing what you do next. 😊
I so appreciate your thoughts on new things. It is easy for me to stick with the usual. It has encouraged me to try some new. You are such an industrious lady. Very inspiring. Blessings to you.
You are such a beautiful person and your voice soothes me so much. I am in Australia so generally wake up to you and love starting my day with your videos as they are such a relaxing way to start a busy day 😊
I really like this content. One main ingredient with multiple ways to preserve besides jam. Most like to make jams on every fruit 😅. I have too many jams and we only open less than 5 within a year.
Old school Polish way to preserve pears is to pickle them in vinegar with cloves. We would eat them with cold cuts, patees or cheese or in a salad with green lettuce and some nuts. We pickle pumpkin cubes in vinegar as well.
Good morning jessica ! Pears are so yummy ! I had to pick some of mine and I’m gonna be making slices ! Haven’t been able to do much as we had to go out of state for my father in laws funeral .
Hi Jessica ❤!!! Thanks for another wonderful video. You are looking fabulous 🎉!!! Sending lots of love and light to you and your family!!! Happy Home Church Day 😊. Your Michigan Fan and Friend Araminta ❤❤❤
Many many thanks for the Every Bit Counts challenge. I've watched several channels. Lots to learn and many new ideas. I really do appreciate you and all you do for your family, and also that you share it with us. I always look forward to your videos.
Great job. You are so conciencious about using every bit of usable fruit or vegetable. It’s a pleasure to watch you work for a year of delicious eating. 😊
Thank you for bringing conserves and chutneys into the light. They deserve more love and back into our shelves. conserves - we put over pound cake/bread, lemon or even vanilla bread chutneys - we put over all sorts of meat, but mostly chicken My favorite is the Ball's cherry chutney recipe over ham. Thank you for having these challenges to keep us going!!!!
Jessica thank you so very much for hosting this challenge! I am amazed at how much I was able to preserve during the month. You are truly an inspiration to us all. What a blessing you are to your family! A true Proverbs 31 woman! I look forward to your January challenge!
Good morning. What a blessing to have all those pears put up. My personal preference is less sugar. I like the taste of the fruit, so the Pomona’s pectin is definitely the way to go. Completely agree with you about Pomona’s vs Sure Jell. There is a pumpkin bread that we make and put cranberries in it. It is a sweet bread. Wonder if pears could be substituted for the pumpkin
