I wonder if a bit of lemon or lime juice and/or zest would be good with that. What do you think? Would it curdle the yogurt?

I am not sure if you drink alcohol or not, but when I saw that runny mint jelly, I was thinking that a mojito style drink would be nice. Actually, even if you don't drink alcohol, you could make a punch with mint jelly and lemon-lime pop. :)

You could also toss a box of stove top stuffing into the blender, add some melted butter and use it as topping for a casserole or two.

Red lentils and coconut go very nicely together. A few weeks ago I made a coconut dahl with red lentils. It's a family favourite. All leftovers are frozen in single serves. With the last lot of coconut dahl, which was Saturday, I made baked potatoes and fill them with the coconut dahl.

Panko chicken! It is a staple in my family’s rotation. Butterfly chicken breast then lightly cover in mayo(I use like a tablespoon for 3 breasts). Mix panko with Italian seasoning, paprika, and if you like spice cayenne pepper. Coast your mayo covered chicken in crumbs and oven bake 350 degrees for about 20 minutes.

The challenge is going well as the pantry stockpile is diminishing 😊 Not sure that I fancy the lentil porridge but lentils in 🍜 soup, yummy 👍

The mint syrup would make a great mix in with tea to make hot or iced mint tea. You could mix it in with your plain yogurt to make it minty or make it more into a parfait. It wold make an interesting addition to baked goods but it might need to replace some liquid like in a brownie mix or cookies. You need to add more things to the pantry so we can give you more ideas. You could hydrate the scalloped potatoes to cook up as hash browns if you wanted to change it up.

Great ideas Alison! I love how many ideas for new ingredients! I'll have to do some more rummaging to add some more soon! I was thinking that too about adding the jelly/syrup and it having to replace some of the liquid. Also I'm not sure what the conversion would be from sugar to syrup. Trial and error I think ;)

@@JessicaWanders Yes, it must take extra self-control when you see a flyer or ad and know that there is a good sale on something. That is where I would epically fail! Also, while I have no recipe for you, I have heard that mint jelly is a lovely with lamb or pork….

I think that was my original idea with the mint "jelly" but then I stumbled when it didn't turn into jelly lol I don't ever have lamb but on a nice pork roast would probably be nice! :)

For the mint jelly you could try to use it in a middle eastern drink called Lemounana. Its my favourite when i visit Egypt.

Whenever my jelly doesn't set up properly, I use the syrup on ice cream, yogurt, or oatmeal. Not sure about mint, though. Maybe on some chocolate icecream, like a mint chocolate chip?

Not sure if you have already used up all the mint syrup, but you could use it as a base for a cold drink. Just add water and ice.

Agree with mint tea - just tablespoon or two and hot water. I can't stand mint tea but my dad drinks it every morning and it is apparently good for digestion.

Mint sauce as a meat glaze or adding to chocolate cake or brownies or icing? I wonder if you can turn that scalloped potato mix into potato soup? Add some yogurt/sour cream? Maybe use the pancake mix for drop biscuits or the flour part for corn bread? Can those two packets be turned into sauces? Mix up the stuffing mix and stuff a chicken breast, roll it in panko and cook it. Ooooo….mint ice cream topper? Mint brownies, mint icing atop mint ice cream…..maybe too much mint. lol. Great video! Great thoughts Carol! There can't be too many mint ideas! I have quite a few jars in the big pantry that I haven't even started to use! I think I need to figure out how to make ice cream with canned evaporated milk! hahaha

@@JessicaWanders I’ve seen a way to make small batches of ice cream literally by hand. Take two zip lock bags….one bigger than the other. Put ice and some salt in the big one and milk mixture in the smaller. Make sure both are sealed…put smaller in bigger and just use your hands to mix. Turns into ice cream. I’ve wanted to try it, but so far I haven’t. I really want to see what you do with the mint. Maybe put in some tea or other drink.good luck on that one!💙🧡🩷❤️💚🦋🦋🦋

I saw several challenges that was allowing $10 per week or $10 per 2 weeks. I think that is great. U can get eggs, milk, and fresh fruit and veggies if there needed. We don't mind anything u do. I think u do an excellent job.

Also, with the other half of the stuffing mix, maybe make some meatballs like in wedding soup or Swedish meatballs. I love the stuffing for meatloaf, but haven't try a meatball yet. Try mint julep with the jelly. Even if u don't drink alcohol u can make if without.

Jessica - I also think I would like it over pound cake with whipped cream. It would be refreshing to freeze it in cubes and add it to drinks or a punch. Most of my jams and jellies that are runny I will use over pancakes. I don't eat much of any of these deserts or bread type things tho these sound interesting! I love mint!

Mint Jelly makes me think of Lamb. I am not a lamb fan, but thats what pops into my head if you do like lamb. Could you use the rice flour and make something like chicken and dumplings? Not sure how that would work out, but maybe its worth a try.

You are still my favorite RU-vidr, Jessica. I just love watching everything you put out. 👍 👍 I keep seeing your pancake mix and wondering if you have any apples in storage. I think you could use the mix to make Apple Fritters. The beef boullion combined with your frozen green onions might make a good French onion soup. I keep thinking the unset mint jelly might be good in some drinks. My ideas include mint hot chocolate, mint lemonade, and mint tea. It might go well over chocolate ice cream, too. Perhaps you could concoct some baked goods with it as well, like using it in brownies to make mint brownies. If you have blackbeans, maybe a mint blackbean brownie? Or perhaps use it to make mint flavoured icing for a cake. Just some ideas...no idea if any of these would work.

The lentil porridge looked interesting. I kept thinking I bet you could add some frozen squash into the porridge especially with the pumpkin pie spices. I have never tried the carrot jello salad but we used to make orange jello salad with mandarin oranges and frozen orange juice concentrate. It is really good. I bet you could put the rest of the stove top stuffing in with the scallop potatoes and it would cook up fine just to use it up. As for the mint jelly ,I would use it to sweeten hot chocolate maybe…if you like that combination.

My daughter made mint jelly too and it's not disappearing very fast. We still have a lot of food . and my kitchen aid stand mixer stopped working - hoping my husband can fix it.

I love meatloaf dinners. Your carrot/pineapple jello looked interesting. I never buy stuffing mixes, as I make my own from leftover bread crusts I store in the freezer. I was thinking if I had leftover bread dressing...and chopped it up and dried it out in the oven a bit, it would be very similar to the box mix. Afterall, it is used for soaking up the juices in the hamburg. Thanks for the idea! Great video, as always

You can use mint syrup in hot cocoa, smoothies, tea, alcoholic beverages, if you cook it down you could put over lamb.

We are doing February & March No Spend Months (so no variable spending what-so-ever outside of petrol). I appreciate that you took on a second month - if you can do it, then I can also get through two full months as well! We have easily done one month in the past, two seemed like more of a fun challenge. **(we have PC points and a giftcard to cover fresh produce, eggs and milk when we get to needing those).

Try making daikon pancake with the rice flour add a bit of bacon too once you make a loaf, slice them and pan fried it, it is really good!

Hmm if you have anything to make it with, maybe make some kind of chocolate dessert with a mint jelly/syrup infused frosting? Or if you have vanilla ice cream maybe a shamrock shake?

All of it looked delicious. I'll have to try the baked beans like that. The stovetop stuffing would also work well (crushed slightly) in fish cakes, perhaps with mint raita (yoghurt and mint jelly) sauce. Also, you could flavour icing or a dessert with a bit of the mint jelly. We eat it here in Australia on lamb in place of ketchup, along those lines the mint jelly might make a nice glaze for a meat dish

It's so great when I think "Ah, well, no one is going to be interested in this meal..." and then there are always people who have never seen it! I love it! It's easy to take for granted the things that we always cook!

You can make a bruschetta chicken casserole with the stovetop stuffing. Its really yummy.

If you don't feel like making up brown sugar for a recipe like the lentils, you could always just use white sugar and stir a little bit of molasses separately. It all ends up mixed together in the end regardless. No harm in skipping a step when we can, right?

What about combining the mint jelly/ syrup with gelatin for jello or adding it to iced tea or hot tea instead of sugar.

I didn't have the exact items this week in my pantry. But I did make a shout-out to you. I had a strawberry jello, 2 carrots and canned mandarins. Omg Yum. Next week I will defenitly try your recipe.

Panko chicken! It is a staple in my family’s rotation. Butterfly chicken breast then lightly cover in mayo(I use like a tablespoon for 3 breasts). Mix panko with Italian seasoning, paprika, and if you like spice cayenne pepper. Coast your mayo covered chicken in crumbs and oven bake 350 degrees for about 20 minutes.
