I live in Oklahoma near the border of Louisiana and we have similar animals to eat, minus the gators. We got tha snappin turtles, tha gar etc. Hell, we never knew you could eat gar until we saw you cajuns eatin them on the internet. We were taught it was a sin to eat them, cause they were unclean animals.

I used to trap them as a kid in eastern WV in a tributary of the Potomac River. We sold the hides but never used the meat. I lived in the Louisiana for about a decade in the 70s and 80s. While there I had the chance to dine on muskrat a couple times. It was decent but not near as good as those young woodchucks we used to get my grandma to cook up for us. Young groundhog is the best rodent meat Ive ever dined on!
