∙ 3 kg Beef rump aged for 21 days @ 2°C
∙ about 1 kg rock salt for dry aging
∙ 5 Potatoes
∙ 1 tablespoon minced fresh garlic
∙ 1 tablespoon chopped parsley
∙ Salt and pepper
