I think the "toss an enchanted book through an ender portal to get a new dimension" could actually be a really, *really* cool feature. Obviously you'd have to tone it down a bit to maybe twenty or thirty dimensions tops - but each dimension could have a different theme, gimmick, and four or five new mobs. It'd be a lot of work, but a total game-changer.

I would love if they kept in the possibility of getting an elder guardian while fishing. Not with every cast of course, make it very rare so it can be a funny thing that happens and a way for players to get a sponge if they can’t find an ocean monument.

I rather like the idea of hostile chickens in the base game. Basically, there could be a small chance for a non-aggressive mob, like the chickens, pigs, etc. to fight back when you hurt them. And gather their nearby homies to swarm you. It would make the early game more difficult, but on the other hand, it could make farming for resources easier later on.
