I’ve never purchased a rotisserie chicken from the store. I’m not sure how the flavor compares, but I’ve started cooking 4-5lbs of chicken breast in the Instant Pot about once a week, shredding it, and then using it in several recipes over the next few days. Enchiladas, egg roll in a bowl, bbq chicken sandwiches, soups, etc. So easy and cost effective!
The Rotisserie chickens from the stores are pretty good. I also shred the whole thing and freeze it in individual portions and just use as needed in tacos, pasta, etc. Btw..The "dark meat" being mixed with the white adds extra flavor!
A much healthier option! I quit buying rotisserie chickens because they add so many harmful/unhealthy additives to them that I do not want to ingest. I know that they are convenient, but there is a price to pay for that in our health. I now make my own like you do, either in the Instant Pot or crockpot with healthy seasonings, and they are super moist, tender, and delicious. For crispy skin, simply put the chicken under the broiler for a few minutes. These two methods are simply set it and forget it and so much healthier.
I definitely want to try the White Chicken Enchiladas!! I buy chickens & cook them myself the shred & freeze it in freezer bags for casseroles & easy meal days. Thanks Jennifer for always bringing us delicious recipes! 😊

I love, love, love the chicken from Costco! I always look for the largest they have available in the case, grab two of those, & go home. I de-bone & shred the chicken & evenly divide all the meat into freezer bags. Leave one out for dinner that evening.... and then, I get onto your channel looking for easy dinner ideas!
I’m interested in the fried rice recipe. I’ll probably make that tomorrow night after a long day of babysitting. Tonight I’m having the tortellini salad with chicken on top. All from Sams
Can't beat Sam's rotisserie chicken. We pick up two, have a chicken dinner the same day which uses half a chicken. Then I remove the remaining chicken from the bone and divide it between three freezer bags for future various meals. Can't beat it! Thanks for more easy recipes, too.
That enchilada recipe was so.... good! We had leftovers last night and made Dorito Nachos to go with it. Thank you for the ideas. Thinking of what to cook is the hardest part for me. Lol

Chicken enchiladas are a great way to use rotisserie chicken👌...I don't cook with cream cheese, tho, a bit of sour cream (traditional) or Greek yogurt, if it's gonna be on the rotation a few times a month.
I just bought 2 chickens from Sam's Club and was going to make White Chicken Chili. But I think that I will make the enchiladas instead! If I have any leftover chicken, I will make fried rice for a couple of lunches. Thanks so much!
Thank you for all your wonderful videos! When you reheat those enchiladas did the texture become gummy? I do find that when I make something like this with flour tortillas that tends to happen. if not how did you reheat them?

I’m going to try all 3 of these recipes, they all look delicious! One thing though, for the enchiladas, you’re only supposed to use 1 tablespoon of taco seasoning- I thought a whole pack sounded too much!
