The reason the Shamrock Shake one didn't work is because McDonald's milkshakes don't actually have any of the ingredients you'd expect to find in ice cream; like, for example, cream. The shakes are made with a flavoured syrup mixed with milk.

You needed more flour and/or less liquid, and probably a little more time in the oven, too. Or, you know... you could just use mint ice cream... 3. Hey, I've made this before. It always comes out like bread if you stick to the recipe. I used only about 2/3 of the flour, added a teaspoon of GOOD vanilla and then poured over a ganche or simple glaze once it's cooled. It comes out like the most moist cupcakes/pound cake ever! As far as the McDonald shake, it's not real ice cream made with eggs and such so it will never work, lol. That stuff is mostly sugar and powdered milk stuff.
I love the fact that you just chucked in the ENTIRE BOX of ice cream at once rather than putting it in gradually. That got me laughing my ass off. Though, I have never seen anyone bake ice cream before. So, this was interesting. I hope you're having a wonderful birthday. 20s are fun, don't worry about it.
I tried this out before and it turned out great! But instead I used 1 1/4 cups of self-raising flour, 1 pint of vanilla ice cream, 1/4 cup of sprinkles and 1 bar of ice cream. I also melted the ice cream before mixing it up. You should try it out!

If you want it green, just use vanilla ice cream and green gel food dye. It will get it to a good color without adding a weird taste. You can find the dyes in Walmart and Hobby Lobby in the sections they keep the wilton baking supplies. Using dyes also means you can make it any color
