Let's make melt-in-the-mouth cookies or helva on stove-top! "Çekme Helvası" or Saray helvası is a type of candy famous in the city of Kastamonu in Turkiye. It has an interesting method of making it. I will show an easy fake method that gives a similar taste in final result.
In the original way, they make simple sugar candy. Then pull the candy while adding the "miyane" (a roasted flour and butter mixture) They continue to pull and fold until the candy forms into threads. Traditionally it is made by hand but now a special machine helps them to shape it.

120gr. butter
3/4 cup powdered sugar
2+1/2 cup (300gr.) flour
chopped walnuts (optional)
ground pistachios (optional)

@@TFT I grew up in farmland (Pennsylvania, USA). Many ethnic groups from Europe there. At that time the cookbooks were handwritten and passed down to the next generation. Everyone shared their best cookie and candy recipes😋. More simple then🥰🙏💞🐲

Thank you for sharing this candy recipe. Chinese has a similar cookies where we cooked the rice flour then add coconut cream then bake it in the oven. The cookies also melts in your mouth. They are delicious. This reminds of of those cookies.

In India we have similar recipe called " soan papdi" method is also similar first they make candy and then add gram flour in it and then they kept on pulling till infinity 😄 it is one of my favorite sweet thanks for sharing..... I will try this turkish version for sure it seems easy to make

Ever since i have tried Turkish susamli tahinli helvasi I won't Never ever eat sunflower tahini ones i have tried Turkish lokumu with coconut flakes too Saray lokumu also some kurabiye ,pişmaniye even aci badem kurabiye,badem pastasi but the pistachio Baklava is the best thing!

Last month I ate "pişmaniye". My brother in law brought it from Turkey. Commercial method of making çekme helvası , you shown, is similar to Pakistani sweet "lacha patisa". "Lacha patisa" and "çekme helvası" making method is same but looks are different. Pişmaniye looks like "lacha patisa". Is there any difference between pişmaniye and saray / çekme helvası?

This one is pressed before serving as you saw. pişmaniye is looser and you can see the threads. Their cooking method can be different probably too even though they have same ingredients I think
