INGREDIENTS for the Berta Jay's
Red Lentil Tortillas

1. Measure 1/2 cup red lentils
a. wash and rinse them
b. put in a bowl
c. ADD 1 cup water to the lentils
d. let them rest (wait) for at least 4 hours or overnight
2. After the waiting period
a. do NOT rinse BUT pour lentils with the water in your blender.
b. ADD 1/8 - 1/4 teaspoon salt (optional)
3. BLEND until smooth (about 1 minute)
a. let it rest for a few minutes to thicken until you get the consistency of pancake batter
4. Place your non-stick fry pan over a medium-high heat and pour your batter in
5. LIFT & TURN your fry pan until the batter stops moving; then, set the pan down and let it cook over the heat for about 2 minutes and then FLIP it. You'll know it's time to flip because the tortilla will be "bubbly and dry."
6. Cook on the other side for about 1½ minutes. PLEASE NOTE: 1st side will be darker than the other but, do not concern yourself about that...the tortilla will be done.
7. That's it!
8. Use these tasty tortillas to make a wrap or just to eat plain, though I know you'll find many other options that I hope you'll share with me.
