[ENGLISH] Jimbaran Grilled Squid, Cheesy Grilled Shrimp, and Tempeh Nuggets Recipe Jimbaran Grilled Squid ingredients: 470 g squid, large 80 g pineapple ½ tsp salt ¼ tsp pepper Sauce ingredients: 4-5 clove garlic 7 pc shallot 3 pc candlenut 1 sachet shrimp paste 2 tbsp oil 1 tbsp water 1 tbsp oyster sauce 1 tbsp ketchup ½ tbsp chili sauce 1 tbsp sweet soy sauce 100 ml water Others: Cucumber Dabu-Dabu Sambal Rice Cheesy Grilled Shrimp ingredients: 9 pc shrimp 1 clove garlic, sliced ⅓ tsp salt ⅓ tsp mushroom powder ⅛ tsp black pepper ½ tbsp oil 1 tbsp mayonnaise 1-2 tbsp grated mozzarella Others: Rice Tempeh Nuggets ingredients: 145 g tempeh 65 g carrot 1 pc green onion 3 pc celery, small 1 pc egg 3 tbsp white breadcrumbs 1 tbsp fried shallots ¼ tsp salt ¼ tsp chicken powder 1 tsp sugar ⅛ tsp pepper Coating: Egg, whisked White breadcrumbs Others: Ketchup Steps: Jimbaran Grilled Squid 1. Clean the squid. Halve, then skewer. Cut the sides of the squid with scissors. 2. Marinate the squid with grated pineapple, salt, and pepper. Mix well and marinate for 30 minutes. 3. Blend the spices, then sauté until fragrant. Add chili sauce, oyster sauce, ketchup, water, and sweet soy sauce. Cook for a moment. 4. Pat dry the squid with a paper towel, then grill for 5 minutes at 200°C. 5. Spread the sauce, then continue to grill at 200°C for 5-7 minutes. 6. Serve Jimbaran Grilled Squid with rice, cucumber, and Dabu-Dabu Sambal. Cheesy Grilled Shrimp 1. Place the shrimp in an aluminum foil tray. Add sliced garlic, salt, mushroom powder, black pepper, and a bit of oil. Mix well. Arrange the garlic on top of the shrimp. Bake for 5 minutes at 200°C. 2. Spread mayonnaise on top of the shrimp evenly. Add grated mozzarella, then bake at 200°C for 5 minutes. 3. Serve Cheesy Grilled Shrimp with rice. Tempeh Nuggets 1. Boil the tempeh for a moment. Slice the green onions and celery. Grate the carrot. Place the tempeh in a bowl and mash with a fork. 2. Add green onions, celery, carrot, egg, breadcrumbs, fried shallots, salt, chicken powder, sugar, and pepper. Mix well. 3. Shape into small balls, about 1 tsp each. Dip the nuggets into egg, then coat with breadcrumbs. Slightly flatten the nuggets. 4. Arrange the nuggets in the air fryer. Brush or spray on some oil. Fry at 180°C for 10-15 minutes or until cooked. 5. Tempeh Nuggets are ready to serve.
