3 Quick Tips for Making Better Pizza at Home

In this video I give you three of my top tips for making amazing pizza in a home oven.
RECIPES:
Poolish:
150 grams filter water
1 gram active dry yeast
150 grams AP or 00 Flour
Dough:
500 grams filtered water
1 gram active dry yeast
850 grams flour
20 grams sea salt
20 grams olive oil
Mix poolish 8-18 hours before you make dough. To make the dough, mix all dough ingredients together for 10 minutes then add your poolish. mix for another 5-10 minutes. let rest for 2 hours at room temp and then ball. Cold proof in fridge 24-72 hours before using. Watch the video for all the details.

Kroger has string cheese singles that are whole milk/low moisture. Using those along with a good mozz ball like Galbani seems to work well. Before peeps crank up their oven to full blast I'd recommend they make sure it's clean of any debris or grease buildup or you will get smoke and nasty smells in the house. My baking steel is 3/8th " and comes full up to temp in 30 minutes....the infrared thermometer don't be lyin' ! Steel is a pretty good conductor of heat so you can do it an hour if you want but that's like shampooing your hair twice. hehe

Wait, you’re only suppose to shampoo once?… The hour is a safe bet for preheating, the outside of the steel will heat first. There’s no way to know for sure that the core is fully saturated with heat, other than giving it plenty of time. Just my $.02. But like everything, if it’s working for you why change it. Big question brother ! Please ! I never get an answer, when heating our ovens and then cooking the pizza should i set it on ventilation or static or both?????????????? Also should the steel be on middle self or top? or bottom? Ive seen so many videos im confused each and every one places it wherever
