I think the premise of the video is to show times where he looked physically on the brink of collapsing. That Shanghai match was insane, but he had no physical issues there. I just watched that final set 2 days ago actually, amazing stuff by both of them.
While Alcaraz n Sinner are exceptions - the other new gen players are pretty hopeless in 3 or 5 set matches against Djokovic in particular. They should perhaps have a physical advantage at the very least - none can capitalize on it; especially since 2020 As Martina Naturatlova has said ; " they are simply not good enough"
