I eat King Oyster mushrooms regularly as baked "chicken" shreds in vegan ceasar salad. Delicious. Mushrooms have become a huge part of my regular diet and I credit you guys for a lot of that. So healthy and good for you and so tasty.
I have just started eating them and make the shreds. I might not be shredding them small enough, because it’s a bit tough or chewy. Do you know how to make them more tender?
I bought some King Oysters today for the first time. I ran into them at Trader Joe's. Since I'm wild about mushrooms, I couldn't resist these beautiful ones. Cooking tonight, I looked at them and realized I needed to do something special with them, but had no idea... So I went on line and found you. What a find!! I can't wait to get Wicked! Thank you so much for inspiring me. I gave up meat and poultry more than 50 years ago, & don't ever feel the need to replace it. I do love fish, though and I will make your mushroom scallops tonight. Thank you, thank you, thank you!!
I'm in the same boat. Just want to "play with my food" and learn new ways to cook interesting things. I love mushrooms and look forward to making a taco filling with my king mushrooms.
GODDDDDD thank you for giving us mushrooms hahaha i lovvveeee mushrooms hahaha ima huge meat eater but that changed when my vegan friend tricked me into thinking i was eating chicken. They made the at home version of PF Changs chicken wraps but with mushrooms. I was shoook hahah i was like dam i thought you were vegan, they were like noooo bitch thats mushrooms, i was like wait whhhaattt
LOL...honestly...we make a fair amount of those PF Chang Lettuce Wraps with chopped up mushrooms and they are amazing. I want them now! And we never make enough! 😂

I always thought that all of these mushroom recipes were out of my reach because of the price of EVERYTHING now, I went to my local Asian market and realized I can buy three King oyster mushrooms for less than $3, um...game-changer!!! so excited❤f
I have to drive 75 miles to get my King Oyster mushrooms......and I do! Pulled "pork" sandwiches, shredded chick-un tacos.....mmmmmm......so many possibilities! Thanks for your channel Derek and Chad!!

@@jhoncanole2979 I currently live in the high desert at 7000ft (Taos, NM) and we get some wild stuff growing in the forrest (when I have time to go hunting). However, I am moving to Vermont in a few weeks and I plan to do some growing there! Thanks for the tips!
@@venomf0 Thanks you! I appreciate the offer. I am moving to a better place to grow in a few days and will try one of the many growing kits offered online. Thank you so much though.
Thank you so much for the video. Had shrimps and oyster mushrooms and had no idea how to combine them. The mushroom scallops was just perfect in a spicy tomato sauce with shrimps. Thank you!
i get these pretty cheap at an asian grocery near me! feeling pretty lucky to have access to them so often, the scallop-cut mushrooms gonna make a mean date meal!

Thank you so much for supporting the production of mushrooms in place of so many various meat, poultry, and marine life products. Besides the invaluable nutritional value of mushrooms.
Yeah, eating more mushrooms is great no matter what. Compleatly it will not replace animal product, for the nutritional values are very different but they can clearly help reduce the need to eat meat every singel day, several times, for that is neither healthy not ecological substainable. I need meat and fish for things like Omega 3, protein, zinc, iron and things like that, but honestly, themneeded amouts are not that big if you plane and chose wisely and every other dish profits just so much from mushrooms. I am only so dependend on meat and dish, for I can not have dairy or eggs, struggle with most grains, nuts and legumes, have to be very very cautious with soy and can not tolerante gluten at all . . . . Otherwise I would totaly rock beeing vegan and advocate to all to overthink their consumption, how much they realy need and what eco sind they need and which they can avoid.
Omega 3 is in many different nuts and seeds. Iron is found in dark greens like spinach and also in legumes, pumpkin seeds and quinoa. Zinc is found in beans, nuts and grains. Protein is found in basically everything, including mushrooms. But you can find high sources of protein in almonds, oats, cottage cheese, greek yogurt, and broccoli. Plant protein powder is also available.
It is so much better to see a mushroom factory then a slaughterhouse. Wow I didn't know that, Great catch makes even more sense now. I am inspired to use them and use the cookbook. I am looking forward to that next video. Awesome food as always.
Having a harvest of mushrooms from spent logs a farm gave me, I am definitely going to try these ways of preparing them. I'm sharing a clip on the scallop method.
I made them for the first time today, shredded, marinated in herbs and spices, then in the oven, and finally added to some brown rice and peas. Pretty tasty!
I absolutely love mushrooms, but to have them grown and shipped from Korea to the UK is such a No No, does nothing for fighting climate change in my book...buy home grown, or at least get them from somewhere closer to where you live
Note: the King oyster mushrooms originally are from the Mediterranean!!! If Marco Polo brought back from his asian journey 'noodles', (spoiler - oh yeah spaghetti were not invented in Italy...) then I guess some wise guy brought these mushrooms to Asia...
Baaaaaaaah haaaaaabaaaaahhhhhh! Maine,”the way life should be”! My people on my dad side are from Downeast Jonesport, and they are all lobsterman❤️ Hard-working folks !
Just tried em Now Fantastic Swiss Brown have more Flavor But they are very Nice, and Keep their firmness and dont shrink much in salty butter. Cook same as Swiss Brown Fry in Salty Butter.
Unfortunately, it’s difficult to find king oyster mushrooms in my area, even the Asian produce stores did not always have them in stock. It’s such a shame, because they have a great texture and can mimic meat quite well. If anyone knows of a reliable online source, please let me know, as I’m frustrated.
its not very often Ive been impressed but this video really caused me to think I need to ask - have you looked at the resource called Gregs Mushroom Grower just google for it
Well don’t just stay just with mushrooms unless they provide the same nutrients as chicken and other meats then yea there should be no argument until we have animals repopulated enough around the world and where we would be able to hunt them afterwards like how we used to do it in the old times
I love your videos and recipes so much! Do you have any advice for how to correct these mushrooms from having a rubbery moist texture? That would be greatly appreciated 😊 thank you!
Really enjoyed this and the follow up Vegan Pulled "Pork" Sandwich! I did the shredding and it is amazing! I will be doing it a lot more! Soaked some in a beef both and some in chicken. Then made quesadillas! I can see not needing the meat both and maybe just some taco seasonings! I'm going to try the thin sliced sautéed with shallots and some spinach in an eggs benedict!
Hi Carolina, all three recipes that we feature are both linked in the video (look for the little white 'i' in the top right corner and click it) and in the description. We've got nothing to hide!
My copy of Wicked Healthy is here. awesome book. I prepare lots of gourmet mushrooms especially Maitake mushroom steaks, it is meat just not from animal, protein included. No one is doing much yet that I have found except you. Reading through it now. Adding it to my collection of plant based recipes. Well done! I just figured out how to make a slurry & successfully growing morel in an area where it is not found here in the Rainforest of washington State.
@Moonlite Lewis thank you for sharing and supporting! It is one of our missions to bring more "meaty" mushroom recipes and techniques to the mainstream! Washington is AMAZING mushroom country...so beautiful! 💚

Purchased the cookbook a few weeks ago, it's beautiful and I love how it's been laid out. We're finally going through it and meal planning for next week. We've always been big fans of mushrooms but you all have made us fanatics! I see scallops in our future.
I've been spending time with the help of my son studying growing mushrooms at home and discovered an awesome website at gregs mushroom grower (google it if you are interested)
Love the ideas! King oyster mushrooms are also much higher in Ergothioneine than common mushrooms so I'm looking for more ways to incorporate them into my diet.
Just found your channel via Sweet Simple Vegan and never knew these type of mushrooms existed! Will try to find in my area, love the pulled "pork" idea and the faux scallops! Have liked and subscribed and looking forward to browsing your site for more great ideas and possible recipes! Thanks for sharing..
I rarely comment, I cook a lot and am a pretty good home cook. I just want to thank you for the effort and fantastic recipes you have put up here. You have a wonderful manner & such a relaxed way of cooking tasty simple food. My attitude is why bother cook something vegan than won’t be tasty and I thank you for all of your amazing work and the work of your team!

Okay. I still cannot find Oyster mushrooms where I live. I'm thinking I need to grow them. Trying to figure out how to do a small vegan food truck (I have a 29' Streamine trailer actually). But our town does not allow food trucks. Any ideas?
Good afternoon. Great video. See how I grow mushrooms in Ukraine. What varieties do you grow? And which strains are the most productive? Thanks for the answer.
