Yes, the stone is the best. Also, the two step cooking was what I was missing. I always had trouble with the center being under cooked. Thank you for taking the time to give us all classes.

Hello Vito. I have been cooking my pizza on a 14" pan with holes and no parchment paper. Right on the oven rack in the highest position in the oven. I use spray olive oil on the pan to keep it from sticking. I think this also helps with the browning process on the crust bottom. The results are very good for me. Just adding my 2 cents. I enjoy your videos. Thanks for all you do.

Yeah, I wonder why he was cooking a pizza with a baking sheet on the bottom? The purpose of having holes in the pan is to allow air to come up from the bottom; I use a convection oven set on fan mode. The hot circulating air cook the whole pizza nicely. The bottom of the pizza was nice and brown

I used your technique in the other video putting the dough on the cold stone with the tomato sauce, then putting it in the oven 500 degrees. The dough stuck to the stone so bad I had to chisel it off. Now I will preheat the stone before putting the dough. Thanks Vito, my pizza making skill has skyrocketed! My next project is a pizza oven in the backyard.

I don't have a pizza stone, I'm sure they all tasted good. I did learn to cook the crust and sauce first here, thanks man.

Vito you are my hero! You can also leave the stone close to the heating element on top and oven door open so that the grid gets red hot and transfers as much heat as it possibly can. Then I transfer the stone to a lower level and close the oven door for five minutes to get the chamber warm enough again. Then I usually follow the same steps as you do by cooking the pizza in two stages. You get a pizza biscottata or crunchy pizza anyway which you would never get in a pizza oven at 430 degrees, but it also does the work for a family home oven.

Vito your vids have taught me a lot, and I regularly make incredible pizzas at home using your poolish method for my dough. Absolutely amazing every time. But you know the most amazing thing? O make my pizzas at home on a large hot frying pan on my stove whilst I dress the pizza.....then after a couple of minutes max I put the pan under a hot frill for 90 seconds fairly close to the flame ...the result is the most amazing thing every time...with fabulous thick fluffy crust and nice thin base. Brother you're a life saver. I always tried making this at home but the cheese tends to burn faster than the crust. Now this makes sense and is alot helpful to make pizza at home. Thank you brother, God Bless You!

You're a star. I built a pizza oven yet have had problems with my pizza bases. I had thought about cooking the base / sauce first but thought it might not work. I will be trying this next time and organise the toppings into containers on a table near to the oven where guests can put on their own toppings. Thanks from France.

I use the stone, but I keep it high in the oven, then I turn on the grill-function, and preheat the stone for an hour or so. When I put the pizza on the stone, I only have to cook it for 3-4 minutes until it´s done, so I don´t do it in 2 stages like you do here. Love these videos, cheers!

it’s interesting you put parchment paper on the pan with holes. I made it without the paper and it came out perfect. But i put mine on the lowest rack of the oven. Great video. I loved all 3 pizzas!

This is unfair as an comparison, it is logical that his pan with holes had the worst results: *He put the plate without holes on the stone and the one with holes on the rack. (Initially he put it in reverse at 9:10) *He could have removed the backing paper after the initial bake (it is not even necessary unless your dough is very high hydration). *When he bakes the first pizza he did it solo. *The hole-pan pizza got baked in the top of the oven, the others in the bottom. Having all of these options at home, I can say that the stone is the best, followed by the pan with holes on the stone (at least for my home oven). If it is a small pizza, the hole-pan on a stone actually works the best, probably because you get the best of both worlds: Preheated stone and a big bare metal surface to conduct heat while still allowing air to flow.)

I used to use the stone for years. I moved, and I didn’t unpack it. So I bought the steel. I love the steel. Especially when cooking in the winter. Once pizza after another makes a warm apt and full bellies 😂 !❤

Hey Vito, it's the stone - always the stone. Like you say clearly, you must have the stone in the oven for one and a half hours to get to the right temperature, people miss this step all the time. My favourite pizza place is closed because of the virus, so I'm making your pizza's every week :) Sure I will go back to them once this is over, but right now, you have helped me so much - thank you!

Nr 1 ofcourse.. i have a Pizzastone. And bake it in 1 time, yes, with 300 degree. It is possible. @ home. But it is a good video to learn. Thx. Ciao da Belgio.

They all look nice..vito is a master at what he does...i use my cast iron pan on the hob and then under the grill to do the top...looks like a real wood fired pizza when done nice charred dough soft crust.

The pizza stone is best. And you get to use a pizza paddle - but make sure the pizza can slide on the paddle. You don't want a half stuck pizza on the paddle when you are trying to slide it off. Making pizza at home for family is best quality time. Grazie, Vito - pizzaiolo di casa numero uno!

Number 1 for me too, I use a pizza stone ceramic and a terracotta one. I find the terracotta one heats up quickly and gives a better crisper base👍

There is a 4th method which worked for me even better than all 3: 1) heat up the oven 2) heat up a pan with a bit olive oil 3) stretch the dough and put it in the hot pan 4) put tomato-sauce an cheese on 5) after some minutes put the pizza in the oven for another 4-5 min 6) done! thank me later!

All three pizzas look very good and like you, I prefer to go with the pizza stone for a well cooked and even bottom. It requires more preparation in that the stone needs to get up to temperature but the results are well worth it. For the pan pizza with the holes, you could remove the parchment paper once the crust is set, just before you put it back in the oven with the rest of the ingredients. The olive oil on the dough is the way to go since the house oven requires a much longer cooking time and not necessary in the wood burning oven. Thanks for pointing that out in the video, these pizzas are for the home oven and will be different in a few ways.

Making a pizza in an average kitchen oven is quite a difficult task at such low temperatures and the difficulty to get heat from the bottom. The dough will need more time too, but for the cheese and basil that is much too long. I really like that you mentioned to add the rest of the topping at a later point. I would have been very surprised if the stone would not have eliminated the competition. The thicker, the better! The best sollution for the kitchen would propably still be a pizza maker, because it can distribute heat directly to the bottom side of the pizza. I got a dirt cheap one as my birthday present and I am really amazed at how well it does compared to my stone.

May I suggest you do a 4th methode? Use large cast iron frying pans preheated in the oven, then you can take the pans out slide a prepared pizza in and replace in the oven. It is sort of like a cross between the stone and the pan methodes, better heat retention than the pan you used etc. Can also add oil for a pan style pizza etc. I really enjoy your videos!

I heat the cast iron pan on the hob, pizza on and heat for a minute until the cheese starts to blip, then under a preheated grill for about 2 min. Way less time than a stone and hotter. Gives a more ‘Roman’ pizza with crunchy base.

The 1st one made on the stone...1 or 2 cm of stone is much better of the thin pan like the others...is question of temperature and stone it gives more heat boost...nice videos

What dough recipe did you use for the home pizza? Great video! #1 was the best. I also like to use a 1/2" thick steel pizza sheet for making pizza at home.
