This sounds nice! I used to make an Italian liqueur called rosolio that contained lemon juice and zest, sugar, milk and everclear. It had that same smooth silky texture. Like drinking an alcoholic lemon meringue pie.

Thank you, I found this incredibly fascinating (even though I can't drink alcohol I like to make it) but I wasn't sure the point of it since Emmy said there was zero dairy flavor so now I know it's to cut the edge from the alcohol & make it smoother

Yes, this is why a lot of alcohol is not "vegan" due to the milk washing technique popular especially with wines

This is fascinating! I wonder if this would work without the brandy? Because I enjoy complex, unusual flavors and I don't drink, I'm exploring botanical concoctions. oh I’ve had one of those, clear milk tea! Although I don’t know how they made it. It didn’t taste quite the same- like very very lite milk. Almost like those yakult yoghurts? It was fun though 😂 very trippy to drink

@@marianocolsin8968 I forget which country has a lemon stilton, England, perhaps? And, an orange marmalade one...? In the USA we also have goat cheese with cranberries in it. I've also seen figs in cheese. But, not often orange. Either way, I, too wonder what can be done with the "dregs"... perhaps some sort of cheese cake or pie?

it seems very close to adding citrus to milk to make diy motserella (sp) ... with booze. If you eat cheese what's in it to not try ? If you sneeze out the whey and hang it to drip dry, like Greek yogurt, I bet you would have a sweet base for a spread, There is room to adjust it with what you decide to add, I must think.

How interesting! There is a very similar beverage in the Azores called "licor de leite" (Portuguese for milk liqueur) but it includes chocolate and stronger alcohol, plus it should infuse for about two weeks before filtration. At least that's the way we used to do it in our family. Your version is much simpler, probably not as sweet. Thank you for this recipe!

A lot of the impurities that the milk pulls out are tannins, so rather bitter and astringent. I wouldn't want to eat it, personally! My husband and I have made this several times, and the "cheese" looks rather unappetizing, once it's absorbed everything it's supposed to.

Personally if somebody said “milk punch” I’d think to just make a huge bowl of White Russian and add a bottle of Baileys to it for good measure. (White Russian for anybody who doesn’t know is a drink of 1:1:4 Vodka: Tia Maria Coffee Liqeur: Milk as we tend to make it in my family)

Definitely gonna try this. I made my own cottage cheese recently and was fasinated how the milk separated and made the cheese. I wonder if those filter sheets could be used for cheese making instead of cheese cloth? I want to make a feta or farmers cheese next but need to get cheese cloth.

The clear drippings from curdled milk is called whey. When you make cheese curds, the clear liquid that separates from the curds is the whey... which is why it's called curds and whey. Whey is typically a byproduct of cheese making, which cheese is really what you've made here. You simply didn't finish the cheese making portion. You can make cheese using a number of methods, such as using citrus or by using rennet. Rennet, however, is an animal by-product, thus vegans prefer to make cheese using citrus juice. Whichever cheese making method you choose, the mostly clear, slightly yellowed liquid that separates out is, once again, the whey. If you're wanting true "clear milk", filtering the whey after cheese making is a more true clear milk. No brandy or sugar involved. Citrus made cheese is also quite common in India and is called Paneer. What's made here is a spiked and flavored version of whey.

so its whey with brandy? because you can make cheese with lemon juice by combining it with milk instead of rennet, and the liquid left is whey so that is the same procedure ?

Since lactose is not a protein and wouldn't coagulate with the rest of the curdles I'm quite certain that nearly all the lactose is still dissolved in the whey and therefore also in the final drink, I'm really sorry :/

Emmy I recommend for your ration pack (rat packs) videos, break up and add the crackers to the main meal. Also, in my country at least, military competitions sometimes include a master chef style element with rat packs... during fun inter-unit competitions.

In the UK the milk is generally the same full fat, semi skimmed, and skimmed. Although I think some dairys the milk tastes diffrent and of course the regulations may differ in the UK compared to the US. However I think the containers are diffrent I've only seen in store shelves upto a max of 3liters of milk sold and all the milk aternitives are upto 1liter only and twice the price at times. Things like chocolate milk are 500ml-1liter but I don't know the fat contents.
