I make hummus every week from a can of chickpeas. I never use oil, only cold water, lemon juice and a little running tahini plus garlic and spices. Very yummy - my grandson prefers this hummus over store bought - just like me.

Hi Chelsea, thank you so much for putting together all this information and support, and free to all of us. I am a 60yr old woman who has struggled with weight issues all my life. I've weighed as much as 110kg and as little as 68kg (that was in 2006). Over the years since 2006 I have gradually crept up to weighing 85kg and freaking out that it's going to get worse. Your youtube videos have been the kick-start I needed to get back to eating more sensibly. In the past three weeks watching your videos, I have begun to eat a lot more veges and fruits, cut out processed foods, and eaten a heap of potatoes and soups and I have dropped down to 82kg this morning. I haven't felt hungry or tired and I feel like my body really likes this way of eating so much more. Most of all I have almost completely cut out oil and vegan spreads. Feeling good, thanks again and hope you keep making your fun and interesting videos.

I've never seen the pourable tahini they have in the US in Australia. As an experiment last week I mixed a whole jar of Macro tahini with water in a food processor (the quality is fine, it's just not liquid - all tahini has sesame seed oil in it obviously). I was adding just warm water for nearly 20 minutes! But once it was emulsified and pouring consistency I put it into a plastic squeezy bottle to keep in the fridge. Easy peasy. My dressing trick is balsamic high in grape must and no added sugar with a dessert spoon of some white miso. It's a small amount like your last dressing Chelsea, and is 1 minute to make, plus super delish.

You are the best! I started listening about 5 months ago. I changed my shopping list in regards to the sauces (butter, pb, ranch...). A few months later I had lost a bunch of weight but actually forgot why or how, I thought it was just good luck or my increase in social dancing. Recently, I started eating everything as I used to and gained my weight back before remembering your channel and the changes I had made. I realize now these are also trigger foods too. Excited to start again with even more awareness this time. Left to my own devises I was generally a healthy eater but I would drown all my veggies in delicious, dense sauces, I especially love tahini.

Another thing that makes a nice low-calorie dressing is bought salsa (I used Amaizin' hot salsa, a European brand) spooned onto a veggie bowl along with some fruit puree and a few chunks of avocado. I discovered it by accident when I made Rip Esselstyn's sweet potato bowl recipe (the dinner recipe from this video: ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-DZZ5aYI3A3Y.html). I had no mango chunks but I did have some mango-apple puree, so I just lobbed it into the bowl along with salsa (which contained a small amount of olive oil) and a few avocado chunks. It was delicious.

Your body not only needs fat to be healthy (and satiated), many nutrients are fat soluble - meaning you won't get enough of vital vitamins if you don't consume your salad vegetables without fat. Now, traditional salad dressings with seed oils (canola, safflower, sunflower oil, etc) are horrible - I would suggest using high quality olive oil.
