**** Blueberry Bread ****
1 1/2 C Flour
1/2 C Sugar
2 tsp Baking Powder
1 tsp Salt
1/2 C Milk
1 Egg
1/4 C Oil (you can use canola or vegi. I used avocado)
1 tsp Vanilla
1 1/2 C Blueberries + 1 Tbsp Flour
*optional topping
1 Tbsp Sugar - I used turbinado sugar
In a large bowl whisk together flour, sugar, baling powder & salt. Set aside
In a medium sized bowl whisk together egg, milk, oil & vanilla until well blended.
Pour the wet into the dry mixture. Mix just until combined.
Sprinkle flour over blueberries and gently fold into the batter. Sprinkle over sugar if
you are using.
Grease and flour a 9 x 5 loaf pan. You can also use parchment for easier removal.
Bake @ 350 for 40 - 50 minutes for a 9 x 5 loaf pan. For an 8 x 4 loaf pan bake 60 - 70 minutes
**** Blueberry Buckle ****
350°
3/4 C Sugar
1/4 C Butter
1 Egg
1 Lemon - zested
1 1/2 C Flour
2 tsp Baking Powder
1/2 tsp Salt
1/2 tsp Vanilla
1/2 C Milk
1 1/2 C Fresh Blueberries +
1 Tbsp Flour
Topping
5 Tbsp Butter - softened
1/4 C Brown Sugar
1/4 C Sugar
1/3 C Flour
1/2 tsp Cinnamon
Grease an 8 x 8 baking dish and set aside.
In a medium bowl whisk together flour, baking powder & salt.
In large bowl cream butter & sugar until light & fluffy, beat in egg. Add lemon zest,
vanilla, mix well.
Add in dry ingredients along with the milk alternating until thoroughly combined.
Add 1 Tbsp of flour to the blueberries and gently fold into the batter.
Spread evenly into a greased 8 x 8 baking dish.
To make topping:
Place all ingredients into a small bowl and cut with a fork until crumbly. Sprinkle over top of
batter.
Bake @ 350° for 40 - 45 minutes.
**** Blueberry Banana Bread ****
350°
2 C Flour
3/4 tsp Baking Soda
1/2 tsp Salt
1 C Sugar
1/4 C Butter - softened
1 C Bananas - Mashed (approx 3 large bananas)
2 Eggs
1/3 C Sour Cream
1 tsp Vanilla
1 1/2 C Blueberries + 1 Tbsp Flour
In medium bowl combine flour, baking soda & salt, set aside.
In large bowl, beat butter & sugar until light & fluffy, add bananas, eggs, sour cream & vanilla.
Stir 1 Tbsp flour into the blueberries, gently fold into batter. Pour into a 9 x 5 loaf pan sprayed with
cooking spray. Top with additional blueberries.
Bake @ 350° for 60 -70 minutes.
**** Lemon Blueberry & Yogurt Bundt Cake ****
2 1/2 C Flour
1 C Butter - room temperature
3/4 C Sugar
3/4 C light Brown Sugar
2 tsp Baking Powder
1/2 tsp Baking Soda
1 tsp Salt
4 Eggs
1 Lemon - zested
1/4 C Lemon Juice
2 tsp Vanilla
1 C Plain Greek Yogurt
2 C Blueberries - fresh or frozen + 1 tsp flour
Grease & flour a 10" Bundt Pan - set aside
In a medium sized bowl sift together the flour, baking powder, baking soda & salt. Set aside
In a large bowl beat/cream the butter for 1 minute, add sugars and beat until light & fluffy, approx 2 - 3 minutes. Beat in eggs one at a time until incorporated. Add vanilla, and lemon juice stir until combined. Add in lemon zest.
Add 1/3 of the flour to the batter, then add 1/3 of the yogurt, mixing until combined, repeat until all the flour & yogurt are mixed in.
Add the tsp of flour to the blueberries and gently fold them in the batter.
spread evenly into the bunt pan.
Bake @ 350 F for 50 - 60 minutes or until a toothpick comes out clean.
My blueberries were frozen and the cake baked a little over 65 minutes.
