I have 2 Breakfast Casseroles that cook Overnight in the Crockpot. Both cook on low 5 to 6 hours or on High for 2 to 3 hours. I have 2 crockpots so I often on Sundays make both casseroles. I turn them on High right before leaving for church and when we return Brunch is ready. I just serve with Coffee, Tea and Juice. With both casseroles I can feed 12 people for brunch but both casseroles reheat well in the microwave if you are not feeding guests. I like to make one at the beginning of the week sometimes so we have a quick breakfast for several mornings. The egg casserole is one of our favorite breakfast for dinner casseroles and it cooks in 2 to 3 hours. I often fix just some biscuits with it. The great thing is you can feed a lot of people brunch with only 1 lb of breakfast meat . OVERNIGHT EGG BAKE 1 package of frozen tater tots, hash browns, o'Brien potatoes or 5 or 6 diced potatoes 1 lb of precooked and crumbled sausage, bacon or chopped ham 12 eggs 1.5 cups milk 3 cups of shredded cheese, your choice 1 tsp salt 1/2 tsp black pepper OPTIONAL chopped onions, bell peppers, jalapenos, mushrooms or tomatoes, hot sauce or salsa Grease your crockpot or add a liner. Place the potatoes of choice into the bottom of your crock. Add any vegetables that you want if you are adding them. Add the crumbled breakfast meat of choice and the shredded cheese. Lastly in a bowl beat together the eggs, milk, salt, pepper and optional salsa or hot sauce. Pour over the other ingredients. Cook on low 5 to 6 hours or on high 2 to 3. OVERNIGHT CROCKPOT FRENCH TOAST 1 loaf of cubed French or Italian bread 8 eggs 1/2 cup sugar 1 tsp vanilla 3 cups of milk product. Milk, half and half, heavy cream, almond milk or any combination. We prefer to use 2 cups milk and 1 cup of cream for added richness Grease crock or add a liner. Add the cubed bread. In a bowl mix together the eggs, dairy product of your choice, sugar and vanilla. Pour over the bread. Cook on low 5 to 6 hours or high 2 to 3. Serve with maple syrup OPTIONAL APPLE CINNAMON add 2 to 3 peeled and diced apples and 1 tsp cinnamon PEACH add 2 to 3 peeled and diced fresh peaches or 10 to 12 oz of frozen peaches BERRY add 1 pint of fresh blueberries, black berries, strawberries, raspberries or mixed berries or 10 to 12 oz of frozen berries CHERRY add 10 to 12 oz frozen pitted cherries, omit vanilla, add almond extract CRANBERRY PEAR add 2 to 3 peeled and diced fresh pears and 1/2 cup of dried cranberries. You can also use leftover cranberry sauce PUMPKIN add 1 cup of canned pumpkin and 1 tsp pumpkin pie spice to your custard when mixing it up CHOCOLATE CHIP add 1 to 2 cups of chocolate chips. You can also add chopped pecans or walnuts PEANUT BUTTER add 1 cup of peanut butter to your custard. I microwave it for 30 seconds so it stirs in easily IF YOU MAKE ANY OF THE OPTIONAL FLAVORS ADD THE TOPPING ON TOP THE BREAD BEFORE POURING OVER THE CUSTARD UNLESS I TELL YOU TO MIX IT INTO THE CUSTARD.

I’ve been making bacon like that for about 4-5 years now when I don’t feel like turning the oven on to make it. I stumbled upon that method once when my skillet was soaking so I just grabbed a deep pot and cut the strips in half and it was so easy and no mess!
I think I will prep that breakfast enchilada recipe tonight for dinner tomorrow!Also purchased peaches this past weekend and they are starting to get overly soft, so muffin recipe is RIGHT on time!!! Thanks for sharing!!!
Hi Kristen, love these recipes! As an FYI, you might want to put some parchment paper sown on the board before adding food to it. Illness from non food safe decorative pieces can be accumulative.

I’m in no way a morning person either but I do love breakfast foods, but honestly whenever I try to eat in the morning time it makes me super nauseous but I LOVE having breakfast for dinner!
Breakfast is my favorite ! Good to eat anytime of the day , especially for me . I don't ever wake up and want to eat right away . I only want my lemon water and a coffee . I definitely don't want to miss out on great breakfast foods though ! I've got to hit play now that breakfast enchilda caught my eye ! 👀

Hi, Kristin. Your charcuterie board was beautiful. You did such a great job on that. Thanks for the tip on cooking the bacon in a Dutch oven/stew pot. I'd never heard that one before. I always cook my bacon in the oven but it's always nice to have alternatives, right? I have also never heard of melted peanut butter on pancakes and want to try that because I can't eat pancakes or French toast unless they are drowning (and I do mean drowning) in maple syrup. If I like it, it would be a much better/healthy alternative to syrup. BTW, I adore that pitcher-looking measuring cup you used for these recipes. I'm assuming it's Pioneer Woman. Oh, girl, I so enjoyed this video and all the recipes you shared with us, but then I always enjoy everything you share with us. Have a great week, dear one. Your breakfast charcuterie board looked beautiful! Seriously looked like something my husband and I spent a small fortune on at this fancy Bed and Breakfast we stayed at lol yours looked just as good if not better and I’m sure MUCH more affordable! Also we just moved to Georgia a couple of months ago and those peach muffins will be made this weekend after a trip to the farmers market!
