We challenged chefs of three different skill levels - amateur John, home cook Lorenzo, and professional chef Chris Cheung from East Wind Snack Shop-to make us a batch of egg rolls. Once each level of chef had served up and sampled their creations, we asked expert food scientist Rose to explain the choices each chef made along the way - both good and bad. Which egg rolls would rival your favorite Chinese restaurant’s version?

Holy trinity for me is: Emily, Lorenzo and Frank. I feel like if Lorenzo put a cookbook out there, he could be level 2.5. Same thing for Gabby going to culinary school. That's no longer level 2. Not level 3 yet, tho. I'd be happy to see a level 2.5 bump for them... just because they are working towards improving their game and still very worth to watch in combo with other great entertainers.

Okay so is the air fryer the level 1 chef go to heater cause that seems to be the case lately and just throw everything in the air fryer while level 2 and 3 will use all these other things. But I am glad that at least level 1 didn't pull an egg roll out of a bag and heat it up and be like... this is it. He actually made it. Level 1 is actually showing skills again :D

If you fry food in oil correctly you will only soak up one tablespoon of oil when deep frying 5 pounds of potatoes. just keep the temp at 360 or above. that is a very hard thing to do though with the oil temp dropping when you put cold food into it.

Not that these are bad, maybe just a different way to make egg rolls than what I know, but my mom never cooked the filling inside the egg rolls before frying them, and we're Chinese. I'm soo confused and I've never seen this technique before 😅
