BUKO PIE
Ingredients:
Crust:
(420g) 3 1/2 cups all purpose flour
(3g) 1/2 tsp salt
(12g) 1 tbsp sugar
(170g) 3/4 cup cold butter
(50g) 1 medium egg
(120mL) cold water
Filling:
(200g) 1 cup sugar
(90g) 3/4 cup cornstarch
(30g) 1/4 cup all purpose flour
1/4 tsp salt
(240mL) 1 cup coconut water
(100g) 2 medium eggs
(5mL) 1 tsp vanilla
(240mL) 1 cup evaporated milk
1kg fresh young coconut meat
(30g) 2 tbsp butter
1 beaten egg for brushing
*11x2.25 removable bottom pie pan
*Bake in a preheated oven at 170°C for 45-50 minutes placed in the middle rack. You can move it in the lower rack around 20-25 minute mark to prevent the top crust and edges from burning
CREAM CHEESE ENSAYMADA
Ingredients:
3 cups all purpose flour
1/4 cup sugar
1 tbsp instant dry yeast
1/2 tsp salt
1 cup lukewarm milk
1/4 cup melted unsalted butter, cooled
1 medium egg
Extra 1/2 cup all purpose flour for kneading (you may or may not consume all)
Cream Cheese Filling and Frosting:
250g cream cheese, softened
1 stick (half cup or 113g) unsalted butter, softened
1/3 cup sugar
1 tsp vanilla
200g cheddar cheese for topping
*Bake in a preheated oven at 180°C for 12-15 mins
*Makes 9 pieces
BUTTERY MAMON
Ingredients:
3/4 cups all purpose flour
1/4 cup cornstarch
1 1/2 tsp baking powder
1/4 tsp salt
4 egg yolks
1/3 cup sugar
1/4 cup water or milk
1/4 cup vegetable oil or melted butter
1 tsp vanilla
4 egg whites
1/4 tsp cream of tartar
1/4 cup sugar
Softened butter to spread on top
White sugar for dredging
*Bake in a preheated oven at 160°C for 20 minutes
*Cool completely upside down to prevent too much shrinking
*Makes 9 pieces mamons using 3.75" (diameter around the lip) mamon molds

Ingredients:
6 egg yolks
1/3 cup sugar
1 teaspoon vanilla
6 egg whites
1/4 teaspoon cream of tartar
1/3 cup sugar
2 cups all purpose flour
1/8 cup cornstarch
1 teaspoon baking powder
1/4 teaspoon salt
