I love pimento cheese! This definitely is a different twist on an old recipe! This actually might be a great addition to a traditional PC. I may play around with this tweaking it with grated cheddar and fluffed up with a little mayo….this is gonna be fun to play around with. Thk u so much for sharing ur recipe ❤

Hi Pat! I live in Central New York State and never heard of pimento cheese until my husband started watching the Masters golf tournament and apparently it’s the traditional sandwich served there. Well I had my doubts about this strange Southern food until one year we actually got tickets to go to the practice rounds at the Masters. So of course I had to try it! I loved it! The spread wasn’t creamy like yours. It had shredded cheese mixed with cream cheese i think. But it was good. May have to try your recipe. ❤

I must agree with you on the green onion idea. I look forward each spring to seeing the onions. They’re not as good as they once were. I love when they have a crisp bite to them. I also love them with scrambled egg sandwiches.
My late grandmother made pimento cheese with Colby cheese, mayo and those jarred. pimentos. She’s being out the grinder and grind the cheese and mix it with the pimentos and mayo. That’s the only way I’ve ever had it so your method looks like it’s worth a go!

I told my husband we’re going to the grocery because Granny Pat made me start craving pimento cheese! I got the ingredients tonight & will be making it for lunch tomorrow!
Tip: Be careful about the amount of juice in your pimentos. Too much juice might thin the cheese, add the juice a little at a time. Less juice will keep the cheese firm enough not to run off your sandwich. Play it by ear…that’s how I make everything.
Hi Granny Pat, when my husband and I lived in Memphis, it was a popular sandwich at church potlucks. Thats where we were first introduced to this sandwich. We are originally from Michigan and people here haven't t heard of this recipe, but we love it! By the way I LOVE your black glasses!!! 👓
It takes a little practice to get it just right. Go easy on the sugar until the taste is right for you. You can always add more, but you can’t take away!
That sure is pimento cheese with a twist! Looks delicious, and more like a smooth spread than what I see here in Texas at the grocery store, which o more like the clumpy kind with the shredded cheese. I bet this would be great on those little party sandwiches. Thank you for showing us how to make it!
Too much pimento juice might thin the cheese. Hold back on the juice until you see if it is going to be firm. Mine turned out to be a great spread or dip.

My Aunt Dolly use to make pimento cheddar biscuits with cold buttermilk. Oh my goodness were they good. Your recipe here looks super yummy too. Go to the GROUPS on FB, click on ‘You might be from Corbin….’ They have shown the Arden Hotel a few time. I was there once as a teenager. Barely remember. The Wilbur Hotel across the street drew the most attention. Can’t figure why Corbin doesn’t believe in Historic Preservation. Wish I knew more.
Hello Granny Pat, and everyone reading this. The pimento cheese looks lovely, I have never even heard of it! I am from England and we do not have velveeta cheese here. Could I subsitute it for mild Cheddar? If anyone can answer me I would be grateful. Thank you xx❤🏴
Carolyn, Velveeta is quite different in taste and texture to cheddar cheese, Cheddar doesn’t melt like Velveeta. I don’t think I would risk it, but if you do, try experimenting with a small amount. I would not use egg in the mixture. Use all of the juice in the pimentos. Good luck!
