Hello, native Mexican here. FYI, not sure if it's mislabeled, but the chilis you had as "chile de arbol" were not those. Those were Chile Puya a hotter, smaller version of guajillo. Arbol is brighter red, thinner, hotter, and smaller. In any case, this recipe looks FRICKIN' amazing! A couple of drops of fresh lime in the consomme when served is the finishing touch. Will try today this today!. And LOVED to conversion of a chicken farm to a mushroom farm. ❤🐔
Your chicken farm to mushroom farm activism is truly an amazing idea. People love to say vegans hate farmers but that's not the case. We love farmers and want to show them and encourage them and support them in converting to a more compassionate and possibly more profitable way.

I see all of these chefs that call themselves the 'greatest' and all they know how to cook is either a filet mignon or lobster, always with the same same dishes over and over again on each and every menu. On the doco, We are what we eat, they showed a guy that was a chicken farmer. One morning he woke up, and said, I can't do this anymore. So he was left with huge empty barns. And ended up putting containers in them and grew mushrooms.

I recently moved to the Irish countryside and met the most amazing mushroom farm, where I finally got some Lions mane. Used the techniques I learned from you and from the pictures i took everyone thought it was meat. It was far tastier! Thank you so much for the inspiration and for driving such a change for a more sustainable world.
I agree! Where I live if you want a vegetarian or vegan taco or burrito you get some lettuce, tomato and onion. That is IT! No lentils or mushrooms .....I won't give them my business.
No doubt. Derek definitely makes me want to open a restaurant. I make some of his meal for non vegans to just try and they loved it . This birria was one of them.
I’m allergic to oyster mushrooms, please please!!! I’m begging you to try this in a future video, it’s freakin’ awesome: get dried shitake mushrooms from an asian supermarket, soak in boiling water, remove stems & blitz in a food processor: best “mince” you’ll ever eat, better than lentils, better than ALL of the plant based-crumbles, MUCH better than fresh crimini/ portobello/chestnut/button mushrooms. I like shitake mushrooms but they have a strong flavor. If I was making a vegan birria I might instead opt for jackfruit to give it that meaty beef texture.
@@danmur2797 Did you ever try the jackfruit? I don't care for mushrooms, and I was also thinking that maybe jackfruit would be a good sub. Even tofu might be a decent sub since that consomme looks like the star of the show to me.
It looks delicious 😮. I'm vegetarian, so many Hispanics (I'm Hispanic ) couldn't understand how i could live without meat. Lol, I really love my pinto beans and rice.
Its actually easy, especially if Mexican to be vegetarian. Hispanics also eat lentils, garbanzos/chickpeas, fava beans, green beans, etc. In Mexico they are usually cooked like pasta soups with a tomato, garlic, onion broth. And corn tortillas are also vegan. Cactus or nopal salad is super delicious. And soy chorizo was popular in Mexico before it was in the U.S. It might depend on what Hispanic country one comes from though. I know Argentines love their meat.

I can’t get enough of these recipes! Out here in Arizona, birria tacos are in in nearly every Mexican restaurant, but I’ve never seen them look like these. I can’t get over how much the oysters look like meat! 👏👩🍳💋🥇

I just found this page this morning and i cannot look away. I am trying to start a new, healthier chapter in my life. I've recently lost another 20 lbs, but I have a loooooooot more to go and I love meat; so whenever I come across videos that show how to use meat substitutes like mushrooms and jackfruit, I get excited. At first, I was skeptical about all of the work behind the birria sauce but, after putting it in the oven for 45 minutes, it was a game changer for flavor! 5 Star AMAZING meals indeed! There was a taqueria here that sold tacos al pastor and Birria, when I used to pass by the smell of the chilis and the spices made my mouth water, but that birria was off limits for me, either lamb, goat or mutton. Thanks to you Derek I can now make my own homemade birria with setas (oyster mushrooms). Buen provecho, 👍and greetings👋from central Mexico.🤠

I've been vegan for almost 10 years now and I really like the way you approached these meals since they really packed a lot of protein which is hard to come by. Also beautiful inspirations for my own cooking. May need to grow some chilis this year, since we don't get these kinds here. A small suggestion would be that you could easily make your own Mayo too. Works really well with unsweetened soy milk, vinegar and oil. Cheers!

Dude, you're literally a life saver. My siblings and I have decided to go vegetarian, (working our way to being fully vegan) and sometimes my brother thinks he won't be able to do it because "Meat is everywhere. You can't avoid it." But you clearly show how to make tacos, burgers, and fried stuff, without ever using meat or animal products. Thank youuu!
