Ofor is not used to harden the egusi balls. Usu is the powder used to hold the egusi so it doesn't dissolve in the soup. Most times the egusi is squeezes to extract the oil before moulding it into balls.

Your channel is mind blowing. I discovered it today and I’m glad I did. These Igbo meals are amazing. I miss East a lot, you can’t find those ingredients for those meals here. Maybe a few that aren’t fresh but not all, I need to go home 😢. Please visit Isuochi in umunneochi local government area. There a lots of local dishes there. I once spent 3 months there with my grandma of blessed memory, and grandpa years ago after my WAEC; those were one of the best times of my life. Please ask for Osu akidi, Ona, ofe oha, and especially ask for Okpa and Iwu. Iwu is what others call abacha. Maybe because they’re in the middle of Imo, Enugu and Anambra, their dishes are a lot different from other Abia villages and more like that of the closer states.
Achara/Ukazi soup is best cooked with smoked MALE goat meat (for taste and that nkpi smell) and a gourd of palm wine to drink along with....afterwards, you are ready for a short afternoon nap.

Oh wow 🤩, salivating here for all the foods especially that Ofe Owerri 😋 I have never eaten okpa before and from IMO State. We usually eat moi moi which is similar to Okpa. Thanks for educating us and sampling these delicacies!
Okpa and moi-moi may look similar and are cooked in similar ways but they are made of two different primary ingredients of beans (moi-moi) and okpa seeds. However they are both delicious. Okpa is a better stomach stuffer.
Why is it that soup was not prepared in Enugu like all the other states? Pls also check out achicha ( dried cocoyam) and ayaraya (corn and fiofio) in Nsukka, Enugu state
Nice video, well done but that's not how to cook delicious Ofe Ukazi sha, she tried though, Usu is the binder, not Ofo. To get the best of it, oil should be extracted from the Egusi, before cooking. The Egusi and Achara can be cooked together separately, thereby getting a rich-flavoured Achara, due to the ingredients used in preparing the akpuruakpu Egusi. Egusi balls that have been smoke-dried can last for years😋
The title says 5 eastern state, I don’t think Delta state is part of it, Ebonyi was created from other states( Abia and Enugu), so if u understand Enugu and Abia state, then u will definitely understand Ebonyi tooo❤

But soup should be watery and stew or sauce should be thick or thicker, so why are you some you Nigerians 🇳🇬 always complaining about Ghana 🇬🇭 soup hhmm. In Ghana 🇬🇭 they prepare soup and sauce or stew. And again you can not use the real Gha fufu to swallow stew or sauce. We used fufu to swallow soup Nigerians.
