This was so helpful!! I ran out of fabric for pockets so I used flat felled seam to sew fabric together to make a pocket bag. Thank you!!! I had only used this seam once before and it was perfect!

We can definitely do that! If you check out the Hughes Dress sew along video, the hem on that one is curved and we take some extra steps to finish it nicely!
I would love to know what is a preferred way to finish gathered seams! I don't have a serger, so that option is unfortunately off the table. I'm getting ready to sew a sheer chiffon Wilder Gown and I had planned to include French seams throughout, and it didn't even occur to me that gathered seams wouldn't be a good match!
You can do a bound seam finish. You could maybe do french seams if your fabric is thin but it will be difficult. You can also use a zig zag finish just sewing over the gathers. It won't be the prettiest finish but it will do the trick!
