Me too on that pot roast recipe. The only way I knew to cook a roast was the crock method. Using canned soup and Lipton onion soup mix. It is good but I am so glad to have a different recipe to use. Thank you very much!

DEE LICIOUS recipe so like what my Mom used to make. I learned to cook from her and these recipes are priceless. Women from the 40's and 50's reallly made cooking an artform. So glad I learned yuoung and taught my children to cook also, even my son is a great cook. The only thing people do now is try to cook healthier and very often don't make the gravies and saukces. This roast looked so good I could almost taste it. Yum. Thank you for teaching the right way to cook.
Made the pot roast last night and knew that this is the recipe I will go back to. My only difference in making this was I used beef stock as I didn't have chicken. When it came time to skimming the grease, I discarded the veggies and poured the gravy into my gravy separator; find it easier than spooning. I added baby yukon potatoes to the roast. A very delicious and satisfying meal. Thank you Rachel.
Oh my gosh! Rachel, this Pot Roast deserves 10 Stars! I have made many over the years, many were great, and some were just okay. Let me say this is by far the best Pot Roast ever! I made it on yesterday and when served, it was the biggest hit, rave reviews from my guest, I was so proud of the results. Over the moon in taste! This method was the best, this is a keeper. In fact, the house still has that wonderful smell even this morning!! I am salivating right now...LOL! Thanks so much for sharing this one.

Oh! Rachel is a genius for removing the veggies and herbs that cooked with the pot roast and exchanging news veggies to be placed under the pot roast to bake for another hour (2.5+ hours total baking time in the enameled, cast iron Dutch oven. Geez, this makes me want to buy a Dutch oven and try her recipe!!! 🍲🍛🌰🍅🐂🤗👍💓 Oh, I'm so hungry!
I just bought myself a dutch oven for Christmas. I've never owned one but I love pot roast. Since restaurants have gotten so expensive, I will make pot roast for myself. I can't wait to use it.
@@maryere6278 - it looks to me as though the only bit that is fried is using a bit of oil to sear the surfaces of the meat - you can use any oil you like, and (at least in my experience) it only takes a quarter cup of Crisco, butter, schmaltz, tallow, or whatever other type of fat you have on hand. It's not remotely finished cooking at that point; the real cooking happens while it's in the oven. The searing is only to give it a browned surface and to seal in the juices so the meat doesn't get dry or stay tough.

I’m in Australia. Cooked your pot roast exactly as shown and the smell was simply amazing. It looked the biz and the taste was out if this world!! My husband has collapsed on the coach after three huge helpings (I did your mash potato too). I’m so happy and definitely subscribing. You’re a wonderful cook. I loved that you prepared at regular person speed and detailed everything so painstakingly. It was very reasonable too….meat cost $11; vegetables etc close to $15. Still enough for his lunch tomorrow if I bake a potato and add some broccoli. Love love love your channel Xx

Rachel, you make your's similar to mine ! Except in the beginning, I dredge with flour in a plastic bag, carefully getting all sides of the meat, then shake off the excess before I brown it in my Dutch Oven. I use a combination of olive and regular cooking oil. I use Beef Stock, not Chicken. Thank you for this delicious recipe. You are a fantastic cook and your kitchen is so clean and cozy.

I have made pot roast for years with a very similar recipe. HOWEVER, I truly want to try your recipe, Rachael. There are a few extra steps in your recipe that give it that delicious taste. To me, after you brown it on the stove, two hours is enough. I think you cooked it just right, so that it was well done, just the way I like it, but not dry. It was juicy, and tender. This is an amazing recipe Rachel! Now I can make roasts that are tender and not tough! I took the carrots and celery and onions from the first round that were discarded and made a purée of them and put them in at the end as thickener. It is fantastic!!
I made this yesterday...OMG! !It was amazing,the gravy was heavenly!I only had a 2 pounder,so not alot left but managed to have enough for a pot roast sandwich this morning.Thanks Rachel for this recipe,been a long time since I made this,will never make it any other way.God bless!!!
I'm so glad I came across your video! I have a pot roast 3lb in my crock pot now but I put all my vegetables in (yellow onion, carrots & mini gold potatoes)...roast on low setting for 8 hours but I'll take the vegetables out much sooner. Great recipe...thank you!
Hi there, just a suggestion, when I cook a pot roast in the crockpot, I start out like Rachel does, with the flour and browning the roast. Then roasting an onion for a little color and then de glaze the pan. I dump everything in the crockpot and turn it on low for eight hours. Around the 6 hour mark, I take all the vegetables, like Rachel used and add them to the crockpot. I also add mushrooms. About 5 minutes before serving, I stir in baby peas. By doing it this way, you will not have mushy vegetables. I hope that helps.
This is exactly how my grandma taught me how to make a roast. I never did master her gravy, tho...I think maybe she didn't tell me the secret ingredient! HA We always had cubed potatoes, smash them on our plate and put the gravy all over....heaven on earth!
Rachel, Dave here... after reviewing several recipes for Pot Roast, I decided on yours. Well, I was not disappointed!!! The best pot roast I ever made. Added a little crushed red pepper with the roast during the roasting process - resulted in a little kick, but not overwhelming. This is a "do again" meal....🥰Thank you!

I leave the soft vegetables in and hit it with a stick blender. Makes the gravy nice and thick. I add a small can of diced or whole tomatoes too, and some red wine. I use Kitchen Bouquet when making gravy for a roasted ham, never thought about using it in pot roast. I'm going to give that a try. Great recipe!
I would puree the veggies too and leave them in the gravy. She did say she wasn't going to throw them away when she removed them. Maybe she pureed them and added them back into the gravy and forgot to tell us.
Hi Rachel I used to cook my pot roast like that when I first got married and that is like 56 years ago I stopped putting flour on my pot roast because of the extra calories. But I'm going to go back to doing that again I've never put tomato paste or tomatoes in my pot roast but I'm going to try that I'm 77 years old and I still like to cook and cook big meals it's just me and my landlady she doesn't cook she always bought fast food all the time on our way home from work, so now I do all the cooking and everything else she has she has Parkinson's so now I do it, but I still make her do stuff to keep her going I have loved all of your recipes that I have seen I think they're awesome and especially the Mexican food and I want to try that what you have made in the past and I would love those roll recipes as well thank you and have a wonderful day God bless Sharon J.
This reminds me of my Mom's pot roast from the fifties! She was a great cook like you. There was always something delicious on the stove. And everything had such amazing flavor. And I love how you call him "My Ron". I lost my soulmate 22 years ago and always called him My Jim. I never go through this trouble since I live alone. But I really should. Pure comfort food. The way you make your roast is exactly the way I've been making mine for years Rachel with one exception. About five or eight years ago, I started using fresh garlic. I did this by Peeling one or two cloves only and then cutting small slits into the roast and sliding the Garlic Cloves all the way down in.... this gives a wonderful flavor to my roast along with the other seasonings.... like you, I always cook a large roast for the same reasons you stated! I've tried this garlic addition on guest and they were the same people that had been at my house before for many years, family and friends, and they commented that they really liked my roast. They asked what was different and when I shared with them, that it was the garlic cloves they really liked the addition, so I've continued every sense using fresh garlic cloves. Please let me know your thoughts on this .... I certainly understand if you are too busy not do you have time to comment, especially with the holidays coming. I continue to love your channel as I think you are the happiest chef on RU-vid especially, most definitely, the most loving with great recipes❣️❣️❣️❣️ I haven't found a single one I didn't love That is the absolute truth♥️♥️♥️♥️
My mother always made her roasts that way - garlic slivers in slits in the meat. I always hoped I'd get a piece of roast with the garlic in it because it tasted the best. I've always put garlic cloves in my roasts, too.

Made this last night. Super delicious. I removed the herbs and onions/garlic. Used my stick blender to purée the first batch of cooked veggies right into the gravy. Did add small potatoes. ❤
Let me tell you, I'm usually the pickiest eater when it comes to personal recipes..and your pot roast is the best recipe I've ever had! At 53, I tend to stick to what I know my family likes...which is pretty much what I like lol..Normally, the 1st time I try a recipe, I follow it exactly. But today we had a blizzard & I had to make due. I had no red wine vinegar, but I had some red cooking wine (I used almost 1 cup lol) & used less salt. I can't say enough about how delicious it is!
