A new technique for a new effect in our image candies. These Crystal Roses are formed from nothing but hot sugar, and flavors. This is the first in a series of candies using this kind of design.

I'm new here. I saw the banana and though "wow, that is an incredible talent". The rose, I'm lost for words. This is almost aggressively talented at this point. I mean my god, this would be like Monet finishing a painting before popping a back flip "tada" then walking off nonchalantly. Also I had a look on your website, a little practice and the rose is now looking insanely good.

With the scraps.. it'll be cool to see a package of scrap candies in random shapes and colors .. nothing wasted and I'm sure it all tastes great.. I'd love to learn how to do this.. it looks so fun .. hard candy and lollipops are my favorite 😊

It actually makes sense that the Cherokee Rose, an invasive species, is the state flower of my home state of Georgia. It's a flower that grows well in our region and is fairly common. In a grander scale it adds to the relationship Georgia has with its Native American history. The Cherokee rose is commonly associated with the Trail of Tears, in particular the removal of the Cherokee, which began after gold was discovered in Dahlonega, Georgia. The fact that this flower associated with the removal of native peoples is itself non-native is ironic, but also reflects the relationship between the Native Americans and the government.

As a Brit my favourite candy growing up was Parma violets as a grown up rose and violet creams, my parents live on the Isle of Wight where there is a lavender farm they sell baked goods with added lavender (the scones were delicious)

I'm from the U.S. but my mother lived in England as a child, so I was fortunate to grow up enjoying a whole other world of sweets and treats: Parma Violets, Sherbet Fountains, Jelly Babies, Wine Gums, Fizzers, Fry's Turkish Delight, being among my favorites. My grandmother kept tins of Quality Street and Lucky Numbers stashed away in the cupboards of her living room end-tables, so those are also very nostalgic for me. Here in the U.S. we have these amazing things called C.Howard's Violets. They are square-shaped, pressed sweets that are (most commonly) sold in a small, purple foil pack and billed as 'mints' (though the violet one's have no mint to them and are strictly a Parma violet flavor). I would highly recommend them to anyone who likes Parma Violets. I order them by the box (12 packs of 15 'mints') from Amazon.

These are so beautiful! I love watching you make the "rock" ( what we call the sticks in the UK) When I was small, and on holiday at the seaside, we would spend hours watching the rock makers pull the sticks of rock. I got a bag of these (rose flavored!) for my 77 year-old mother, and had her watch the video first. She loved both! Also got the sunflower candy - she loves sunflowers. I ordered late for Mother’s Day like a dork because I completely spaced on the date, and you guys shipped AMAZINGLY fast. So glad you got in rose flavoring for this - I love rose infused tea - sure the candy will be simply amazing. *note - sadly will not be ordering as you cannot guarantee the rose flavor. Will keep checking back hoping for that ability. :(

Oh My God the crystal Rose candy!!! Wife ordered some with our assortment bag and its the most unique candy I have ever had. We had roses all around the house growing up and this candy brought those fornd memories of playing in the yard back again. We may have to change next years vacation to Daytona Beach next year.

Pretty sure they do sell them, but what he's saying here is that you can't really re-shape the scraps (in this case) into adding to a new batch of the same candy

If you remelt candy a bunch of times, it burns and doesn't taste right. So once they can't use the sugar anymore, this particular store lets them cool down, if the pieces are too big, I'm pretty sure they break them up a little bit, and they put them in a small bag and sell them labelled as "unicorn droppings"

Could you address in a future video why you can't reheat the candy? Does it get too dry or burn? Also, I made sure to cast my vote all the way from NY

he said in another comment somewhere here that reheating the candy to a re-moldable state would melt the colors together, burn the citric acid, and burn off some of the flavoring. the last two things would make a second "batch" taste not nearly as well as the original. and because they actually care about the integrity and quality of their product, they won't just reuse candy to avoid waste if it means it won't be as nice to look at or (more importantly) as delicious

RubyLovesRocket lilac unfortunately has a very strong basic, soapy taste. I searched far and wide for a way to make it appetizing and match the scent but I have long since given up

I just got my order. This is delightful! And exquisitely beautiful. It tastes like a fresh sweet plant, almost like the after taste of a snap pea, with the slightest echo of rose essence. It’s amazingly delightful! I’m trying to eat it but can’t resist looking at it over and over. What a work of art!!

How does the melted sugar not leak out the corners of the metal bars during cooling? it doesn't seem like there is any rubber seal or anything? Is it just too viscous and therefore cools down too much to leak through ?

Keelan Greenwood-Hallett the metal bars are cold (im guessing?) so it solidifies the outside of the candy just a bit

you can tell by the pouring of the liquid sugar that it is quite viscous. Combine that with the cooler temperature of the metal bars and you get a hardened outer layer so you don't have to worry about leaking out. Even if it does leak out, it'll cool on the cooler surface and it's easy to reincorporate back into the rest of the liquid sugar.

watching these videos has inspired me, im considering being a candy maker myself now, there are plenty vintage candy shops in my city. old sacramento is 50% candy shops and 50% knick knacks. even if i dont become one, i have a deep respect for the art after being a subscriber for a good while.

Exactly. It's making murhinni. But it's so much easier, it's almost like cheating! Makes me want to give him some pointers, but gaffers have to have their secrets! It would be cool to learn some of his, too. Combining the two techniques could yield the most ridiculous results.

Having grown up with a traditional English boiled sweet makers at the bottom of my road, it's amazing to me how similar and yet different the US tradition seems to be. Do you have an equivalent of the traditional "Rhubarb and Custard" and "Sherbet Lemon" sweets (I believe both are Victorian, or near Victorian sweets)? In my experience, visiting Americans have never encountered them (and find them slightly odd) but they were such staples of my childhood I can't imagine a sweet shop without them! (Also, if you do have them, it would be really interesting to see how Sherbet Lemons are made - how ever *do* you get the powder in the center without melting it into the boiled sugar?)

Kitzy A As a Swedish guy who loves rhubarb crumble with vanilla custard, that flavour of sweets sounds absolutely delightful.

@Bauhauskiddo They are lovely - they are generally lozenge or sphere shaped, with the two flavours separated (a little like a yin-yang) the rhubarb side is quite acidic, and very distinctly tastes of rhubarb while the custard side is a more vanilla/creamy sweetness. sometimes they are rolled in dusting-sugar to stop them sticking together.

Sherbet Lemons were changed to Lemon Drops in the American version of Harry Potter because sherbet lemons don't exist here.

well it's a song included in fallout 4's radio station (and fallout 3 since they're the same) but it's not exactly a fallout song per se. More just an older song they threw in.

The story of how the rose got its color red. Chronos seized the opportunity, attacking his father with a sickle crafted by Gaia. In fact, he rather gruesomely severs Ouranus’ genitalia from his body. As his father’s testicles fall into the sea, Aphrodite is born. And as the sea foam around her touches the earth, bushes of white roses appear. What’s not to love about a castrating myth featuring a flower that would go on to symbolize purity and devotion? A second rose-scented tale of Aphrodite involves her lover, Adonis, and the myth of how the rose turned red. One day, Adonis was out hunting boar. Ares, jealous of Adonis, had secretly sent the wild boar to harm him. At the last moment, Ares shares this knowledge with Aphrodite, who rushes to warn him. As she hurries to her lover’s aid, she scratches herself on a rose bush, splashing speckles of blood on their soft white petals, turning the blossoms red. Unfortunately, she is too late to the scene, and Adonis perishes from a fatal wound to his thigh. As Aphrodite cries over her lover’s body, her tears fall into the pools of blood surrounding them, and the mixture gives rise to the anemone flower.
