A: Lamb chop with black pepper sauce
黑胡椒羊扒
500g Lamb shoulder 羊肉
250g Black pepper sauce 黑胡椒酱
1/2tbsp Oregano 1/2汤匙
1/2tbsp Basil 1/2汤匙
B: Chicken wings with Honey BBQ sauce
蜂蜜烧烤酱鸡翅膀
2kg Chicken wings 鸡翅膀
250g BBQ sauce (store bought)
100g Tomato sauce 蕃茄酱
100g Oyster sauce 蚝油
1tsp Pepper 胡椒粉 1茶匙
1tbsp Sugar 砂糖 1汤匙
1tsp Salt 盐 1茶匙
2tsp Dried rosemary 2茶匙
2tsp Dried Thyme 2茶匙
C: Thai BBQ pork skewers 泰式烧烤猪肉串
1kg Pork collar/shoulder loin 猪肩猪扒肉
2tbsp Chopped garlic 蒜末
6 Cilantro roots or 2tbsp cilantro stems 香菜根
1/2tsp White pepper 白胡椒粉 1/2茶匙
1/2tsp Black pepper 黑胡椒粉 1/2茶匙
4tbsp Oyster sauce 蚝油 4汤匙
4tbsp Light soy sauce 生抽 4汤匙
2tbsp Dark caramel soy sauce 黑酱油 2汤匙
1tbsp Cooking oil 植物油 1汤匙
120g Coconut milk 椰浆
70g Palm sugar/Brown sugar 黄糖
5tbsp Corn starch 玉米粉 5汤匙
D: Beef and lamb satay 牛肉、羊肉串
500g Beef Tenderloin/Lamb shoulder 牛/羊肉
3-4 Stalks of lemongrass 香茅 3-4根
25g Ginger 姜
3 Shallots 小葱头 3颗
1tsp Fennel powder 1茶匙
1tbsp Cumin powder 1汤匙
2tbsp Coriander powder 2汤匙
1tsp Turmeric powder 1茶匙
1/2tbsp Dark soy sauce 黑酱油 1/2汤匙
1/2tsp Pepper 胡椒粉 1/2茶匙
1/2tsp Salt 盐 1/2茶匙
4tbsp Sugar 砂糖 4汤匙
E: Grilled king oyster mushroom 炭烤杏鲍菇
200g King oyster mushroom
1/2tsp Salt 盐 1茶匙
1/2tsp Pepper 胡椒粉 1/2茶匙
1tsp Dried parsley 1茶匙
1tbsp Cooking oil 植物油 1汤匙
F: Bacon with Leeks 培根大蒜
Streaky bacon
Leeks 韭葱/大蒜/蒜苗
G:
Sausages 香肠
Coconut cream 椰浆
Butter 无盐奶油
Honey 蜜糖
Bamboo skewer (Soak bamboo skewers in water overnight before using)
1-A.Marinate the lamb shoulder + black pepper sauce overnight in the fridge
羊肉 + 黑胡椒酱混合均匀,冷藏腌制隔夜
2-B.Marinate chicken wings + BBQ sauce + oyster sauce + tomato sauce + sugar + salt + pepper + rosemary + thyme overnight in the fridge
鸡翅膀 + 所有调味料混合均匀,混合均匀,冷藏腌制隔夜
3-C.Cut pork into slices, about 3mm thick. Mix pork with all the ingredients (except corn starch), then add in corn starch and mix well, marinate overnight in the fridge
Thread the pork onto the skewers on the next day
猪肉切成3mm厚度的薄片,倒入所有调味料 (除了玉米粉) 混合均匀后倒入玉米粉,搅拌均匀、冷藏腌制隔夜
第二天,用竹签把肉串起来
4-D.Cut the beef/lamb into strips
Blend lemongrass + ginger + shallots.
Marinate beef/lamb with lemongrass mixture + Fennel powder + Cumin powder + Coriander powder + Turmeric powder + Dark soy sauce + Pepper + Salt + Sugar overnight in the fridge.
Thread the beef/lamb onto the skewers on the next day
牛/羊肉逆纹路切成条状
把香茅 + 姜 + 小葱头搅碎
把牛/羊肉 + 香茅混合物 + Fennel powder + Cumin powder + Coriander powder + Turmeric powder + 黑酱油 + 胡椒粉 + 盐 + 砂糖混合均匀,冷藏腌制隔夜
第二天,用竹签把肉串起来
5-E.Cut mushroom into chunks. Marinate mushroom with salt + pepper + parsley + oil for 30 minutes
把蘑菇切成块状,与调味料混合均匀、静置30分钟
6-F.Cut the leeks into 3-4cm long. Wrap leeks into bacon
把韭葱/大蒜/蒜苗切成3-4cm条状
把韭葱/大蒜/蒜苗包入bacon内备用
7-G.Grill the meats, mushrooms and sausages over the charcoal grate on medium or medium high heat for 3-6 minutes per side
将所有准备好的食材以中火/中高火炭烤至双面金黄色即可
8.Brush butter + honey on both sides of the meat during charcoal grilling
For the Thai BBQ pork skewer, brush with coconut cream
炭烤中在肉类前后两面刷上无盐奶油 + 蜂蜜
在Thai BBQ pork skewer上则刷上椰浆即可
