This is one of the reasons i like spanish dishes. Only very few ingredients, 2-3 ingredients. It is tasty. Also its flavors are maximized. Such a gourmet dishes. Simple but tasty

I love your channel. I have such happy memories of a trip to Espana in 1979. What a beautiful country. My partner spoke excellent Spanish and I spoke basic Spanish, so besides enjoying the food, the museums, the sights, we had a lot of interaction with actual Spanish people !☺️ Every morning we would get up early and get the most delicious coffee or hot chocolate along with a yummy crusty roll. Then we would go sight seeing or to a museum. Mid day, an amazing lunch. Lots of wine. First time I ever encountered Paella. Then a long nap. In the late afternoon/ early evening.....TAPAS! I don’t really remember eating dinner out. I think we usually skipped it! Anyways we saw much of the country, including the Northwest coast which was stunningly beautiful, and where I ate probably the best seafood in my life. After this pandemic is over, I want to revisit two countries. Espana and Italy. ❤️❤️❤️❤️❤️
For my non Spanish pals: a tapa is just a small portion of food. If you want a complete meal you typically eat 2 or 3 tapas. In most Spanish restaurants, tapas are just smaller versions of any typical Spanish dish. You can have a lasagna tapa, fried chicken tapa, and even mini-hamburgers.
I need a big sip of whatever keeps you so positive and uplifting. Even without parsley I still enjoyed the recipes and since I recently invested in authentic Spanish paprika, I can finally make my dishes taste that much better. Un abrazo y cuidate.

Tapas, Tapas, Tapas! Oh yes, love them! I could live on just tapas and jamon serrano forever........ I have never tried, much less heard of those beautiful mushrooms and garlic. Definitely on my must-make list. Queso Manchego? Heck yeah! Interestingly enough, after the third tapas so far we have every ingredient here to make them! Let's see the other three... "You have to include at least one potato dish" Claro Que Si! They looked beautiful, Albert. Oohh....we ate our last asparagus bundle last week! No more to be had here at The Hacienda. Actually almost every restaurant I have ever been to here in Spain (Valencia, Rioja, Aragon, Castilla La-Mancha) serves queso Manchego with the rind on, but it could be different in different regions :) much love and stay safe

Pardon my ignorance. Doesn't heat destroy the taste of Extra virgin olive oil? I remember reading somewhere that you are not supposed to cook with it. You use it to top dishes at the end of cooking.
Hello I love your recipes but what happened to meat. Every year I got to the canaries specially fuerte ventura and my favorite meal is baby goat shank and patatas bravas and gravy. Beautiful

I met a woman from Spain around the olive oils at the store and she gave me a quick lesson about single source, extra virgin and first press. Her advice allowed me to get a much more flavorful olive oil. I see why it's a key ingredient in your tapas. I loved the video by the way. Simple, fresh ingredients make delicious dishes. ❤
