1/3 radius track, I am not heard this terminology before, how does that relate to inches

Its 505mm radius just under 20 inches

Interesting, that is a small radius, I find a 22 inch radius small, working on my layout, planning 24 and 26 inch radius

Its about the largest you can get away with on a small layout like this. Most train sets come with this as a standard fixed track curve. On bigger layouts you would use the biggest radius you can get away with.

You don't need to do 'added trimming' of platforms on curves if you do your original marking with the longest vehicle you will be running - end-overhang for outside-curve platform and mid-vehicle for inside-curve platform.
