I love cabbage! I cut up smoked kielbasa and fry it and add chopped head of cabbage with chicken stock. I cook a bag of extra wide noodles/drain and add it to the kielbasa/cabbage. One of our favorite meals:) I edit to say that we grate a carrot into our chili as we use that instead of sugar for the tomato acid.)
Great idea! Carrot instead of sugar - Thanks! I love cabbage, potatoes and sausage, all cooked up together with cornbread (if I am in the mood to make!!). Sometimes I'll add green beans.
I cook smoked kielbasa, cabbage, onions sliced, carrots sliced, olive oil & a bit of butter with a tablespoon of fennel. I also add some egg noodles to the skillet and let it simmer. Oooo good for the family. Plus healthy!
Re: lentil soaking. I've found that soaking brown lentils in broth (not stock) or just some salted water, results in "pulling out" some of the bitterness people detect in them. If you slow cook them on low in either of these liquids it's really obvious because there will be a dark layer on the top of the liquid. I remove that dark layer before straining. I've gotten people that said they hated lentils to like them due to this. Not sure if you've tried it, before, but perhaps it may help someone else that struggles with enjoying these incredible bubbles of beauty.

Red lentils is brown lentils with the husks removed. That’s why they cook quickly and can be a “creamy” component in dishes. Nice video, perfect for this time of year.❤
With all due respect, that's not true. There are many, many different kinds of lentils in all shades of yellow, orange, red, green, brown, black. These are all distinctly different varieties of 'pea'.

I have been experimenting with organic red lentils. I made burgers the other day that were very tasty. I took 3 cups of red lentils and soaked them in salt free organic chicken broth for a couple of hours. Then I drained them and put them in a food processor to grind them not to mush but to break them up so they will stick together. Then I added one tblsp cayenne pepper, 1 tsp garlic, two tblsp himalayan salt, 1/3 c nutritional yeast 1/3 cand bread crumbs. Form into patties and place on greased cookie sheet. Bake for 20 mins 400 degrees, flip and cook for 15-20 mins more until golden brown. These are crunchy and full of flavor, if heat isnt liked just reduce the red cayenne. These are seriously yummy and I'm sure that one could use organic beef broth and other spices to make a more beef flavored burger if so inclined.

Lenticchie (lentils) are a staple of my weekly diet. Either lentil soup (which I make a double batch and freeze in an airtight glass container) or Pasta Lenticchie which is also easy and freezes well. These are truly Italian comfort foods. A dietician once taught me to eat a citrus fruit after any bean dish....it helps the body to better absorb the iron content and aids in fending off anemia. Tonight a batch of pasta fagiole (we say fazul) is cooking in the crockpot. A cara cara orange should be the perfect complement. Buon apettito! Saluti da NY!

i eat coleslaw mix & spring mix together ( not cooked - raw) with a serving of cottage cheese and a few cherry tomatoes 🍅 no dressing - sooo good ! thank you for sharing your research with us !
Oh, yes.... green cabbage is fairly regularly in my shopping cart to make homemade coleslaw. On occasion I'll saute it to crisp tender stage and add a bit of butter, salt and a dash of red pepper flakes. I'm a big fan of peanuts for good fat and plant protein.

Hack: Open both ends of the tomato paste can, push one side through. Either use it all, or use the amount you need and store rest in a small container. The zuppa looks humble and amazing.

I just found your channel. We have a tomato allergy and I just wanted to add we use plain pumpkin or red pepper paste in place of the tomato and really enjoy it. I know it is not traditional, but it works well for us.

Thank you for this! I have been looking for ways to save, but still eat healthy. My diet has not been so good; my mother would not be happy if she were alive! My mom was Sicilian and my Dad Naples. So you know I used to eat well.
The cheapest healthy foods come unaltered and directly from fields, forests, meadows and roadsides... nettles, dandelions, blackberries and their leaves as tea and of course from spices grown in the garden, balcony or windowsill such as thyme, sage, rosemary, etc.

You can really cook healthy with dry veggies. Split pea, lentil soup, variety of dried beans, rice. I look for sales on chicken or pork to make stews or make pots of chili. I get great deals on day old bread and bags of fresh veggies marked down because they're slightly damaged. I roast chilies and tomatoes and make salsas, or freeze them for later use. My New Year resolution is to not eat out as often, it's gotten ridiculous. If we do, it's with a Groupon or gift cards I buy to help with gas discounts.
