That is a great way to use up all those vegetables and it all looks delicious. It would be something I struggle with most of the time, as its just me. But might give some of these a go.

I like this video, please do more cooking if you are able to. By the way that chicken mince for pets is fantastic isnt it ? My 2 chihuahuas and 2 cats love it. I usually divide it up in zip lock bags, flatten them out and freeze them.

I am growing tomatoes, capsicum, pumpkin too and some herbs, basil, parsley. I also have mint which grows most of the year. And nearly forgot rosemary 😊

Wow…your empty fridge looks fuller than mine after I do a weekly shop 😂. Right now in my fridge is cheese, butter, eggs and 5 potatoes till I can go shopping 😔
Aww, I totally get that! 😊 Growing up, my mum used to make an Italian dish called "minestra" with whatever we had in the fridge or pantry. She'd whip up something simple like a potato minestra-onions, garlic, potatoes, boiled with a stock cube and the crust of a piece of parmesan, stir an egg into the soup, and voila, a delicious meal! 🥔🍲 It’s amazing how you can turn a few basics into something comforting.
