I've just watched several of these videos and while they are clearly too quick and have too many scripted elements, like answering phone call questions, as in the Daisy Ridley one or a sudden group of Ballet dancers waiting for Amy Adams etc, the videos are surely rehearsed, but the answers are still so random, i reckon that they're genuine answers and not scripted themselves... It probably just took the people that were interviewed about half an hour thinking of their responses, though they could just have used jumpcuts, like millions of RU-vidrs already do... :) .
