Winter meals in India are incomplete without a dose of fresh leafy greens. They are superfoods rich in nutrients and are mostly made with minimal spices. First is Chaulai ka Saag. Also known as amaranth leaves, this saag is commonly found in the foothills of the Himalayas and also in the coastal areas of South India. It is also known as Anne Soppu in Karnataka and is water spinach that is considered effective in weight loss. It's a low-calorie saag that is rich in vitamins, antioxidants, and minerals. It is also effective in preventing osteoporosis and anemia caused by iron deficiency. Another must-try variety is Bathua ka Saag. Commonly available during winter in Bihar and UP, it is also known as Chenopodium album, lamb’s quarters, goosefoot, or pigweed. Rich in potassium, zinc, phosphorus, calcium, and other antioxidants, this arrow-shaped green is also a blood purifier too. It is also packed with amino acids that aid digestion.
