In part 8 of 9, Sandor demonstrates How to Make Sauerkraut with the Masontops Pickle Packer, Pickle Pebbles, and Pickle Pipe. Packing your cabbage tightly to remove air bubbles, keeping it submerged below the brine, and allowing CO2 to safely release are integral to a successful ferment.

I am impressed with these Masontops videos. Sandor Katz presents the no purchase methods, then applys 3 Masontops products that support reliable results (available for separate purchase or in sets). Not just marketing: education!

I loke the kit it is great i did sauraktaut and asparagus a few years ago they both came out goid and tasty. Buting a new kit for my beets I am planning to do soon.

Love your book Sandor. Have a copy and also gave one as a gift to my sissy. What do you do if you get black spots on the cabbage while fermenting? If your book addresses this, sorry about not having read that yet. My mom made sauerkraut and no literature at the time addressed this problem. Really curious because we've been afraid to do it since.

best to hold the jar with ur feet (or let someone else hold it) while pushing down with force on it with the tamper thing the slightest fluid underneath will make it all slippery and if u just push slightly at an angle will send it flying otherwise lol

How do the pickle pipes compare to the air-lock lids ? Do the air-lock lids release liquid like the pickle tops ?

Can you use those silicone pickle pipes to cover the kraut in place of using a cabbage leaf? to keep the cabbage from floating up?

I have some cabbage fermenting for 4 days now and I noticed a few small air bubbles near the bottom of the jar, should I try to remove them or will it be ok to leave them in.

It's supposed to bubble; that's the process of fermentation you're seeing. Leave it alone. As long as everything is submerged under the brine, it's all good, and you can just let it do its thing. Don't even think of disturbing it before 4wks.....better even 6wks. That's with the small batch, Mason jars & tops. With the old, giant batch, crock method, I didn't even peek at it before 6months. I checked it to make sure there were no overflows, or underbrined situations, but with the Mason jar method, it's so much quicker & easier. I love the self-burping, silicone nipple tops; they're brilliant, no fuss helpers, & the wood plunger, is not only useful, especially to arthritic hands, but is an aesthetically pleasing sight, on my pantry shelf. I washed, dried, & oiled it with coconut oil when I took it out of the pkg, & I also do this after each use. The oil not only protects the wood from any spices that would penetrate & linger, or transfer to subsequent ferments, (Kimchi) but it brings out, & darkens the wood grain. It looks beautiful.

how about a clean rock to weight it down?

Hi B R, although it would be possible to use a rock in theory, in reality many rocks are quite porous so truly sterilizing them is difficult, plus they can absorb and let bacteria fester during the process. Our Pebbles are intentionally made of non-porous soda lime glass (same glass Mason jars are made from) for that very reason.

I disagree. Sandor first demonstrates making the ferment WITHOUT the Masontops products. Since each product is sold separately, the consumer can decide for herself.
