What are you talking about of course there's a chemical ratio that does the best fermenting in minimal time in almost any environments the more salt or less salt or if it's iodized these are all things that can be taken into consideration. The process is not about a flavor you can change the flavor
I loke the kit it is great i did sauraktaut and asparagus a few years ago they both came out goid and tasty. Buting a new kit for my beets I am planning to do soon.
Id argue this is just fermented pepper purees, id suggest adding some spices, onion, garlic, honey, and other veggies to truly let the flavors come out!

Im polish and i approve of eating it this way next time though no offence you should try polar sausege with sourkraut and cook them medium heat tor 25 minutes then enjoy with mayonaise and if your not up to the challenge try A alice of bread with matonaise in the bread and wat it or make a aandwhich that incluse ham mustard and bread
