Great video! The vast majority of Brits don't know, but there are tons of native spices here in Britain, which I've recently started developing a compendium of (though it's difficult when you're working 40-50 hours a week). A lot of compounds usually associated with exotic spices and flavours - coconut, nutmeg, chili, vanilla - can be found in British plants that grow out in the fields, countryside paths, coasts (and underwater) and woodlands. However, they're found in different forms, for example a coconut flavour can be found in the cap of the coconut milkcap (Lactarius glyciosmus) and the flowers of gorse (Ulex europaeus, though this latter source seems to fade quickly, but is strong fresh) rather than the seed, as a result they will need to be used differently. It would be great to hear from you if you're interested in some way doing a "fusion" whereby the recipe is of your traditional dishes, but uses wild foraged herbs and spices from here rather than shipped in from abroad. As we live on an island (also I'm pescetarian) I'm really interested in developing seafood based cuisine, however there's no reason chicken and beef can't also be used.

Best to blend in a spice grinder or better still add it to your wet marinade (as I did with the Ginger , Onion , African Nutmeg and Aniseed blend)😘😘

Fafa, what do you think of powdered spices (for example: powdered onion, ginger and garlic)? Are they good for infusing meats and flavouring the dishes?

Powdered spices are good provided they’re stored perfectly. The flavour of the spice will be lost otherwise. Best to freeze your powdered spice in an airtight container and roast just the amount you require for a recipe. Dry roasting the spice will activate the oils and flavours of the spices. ginger, onion African nutmeg, anise, cloves, pigmento, vinegar or lemon juice to marinate, smoked paprika, and marinate for an hour and grill at 200 Fahrenheit for the first 15 minutes and 170 Fahrenheit for another 15 minutes.
