It always amazes me how much food they (restaurant chefs/cooks like these) can prep at once. Like the batter for the katsu, the huge wok of rice or the sauce. All with little to no spillage. Impressive.
As a chef, I used to like to say that half of our job was moving food product from one container to another. Whether from the pot to a container to cool it, then into the proper storage container, then into whatever used on the line for service, then into a smaller container in the walk-in when it’s only half full now….sometimes into squeeze bottles for certain sauces, usually pouring from a very large full container into a very small one. Lots of practice without spilling
per dish, it's much easier to cook large batches because it doesn't require as much precision. also, they can cook large batches because of the volume which ALSO is increased by small menus. The japanese people can appreciate small menu's because of the monocultural system
I love this channel! Not only are you showing how things work behind the scenes, but also introducing new places to eat to your viewers :) I can't wait to try this place when I can go visit Japan again!
I'm from India and saw this video last year. I made it a point to visit this restaurant during my trip to Japan and the food and portion size was amazing. They also have a chef who speaks English so you will not struggle with ordering. This is in the university area of Kyoto and it was nice to see students hanging out in groups across all the restaurants down the street.
I mean, most everything came out of a can, at some point the guy even microwaved one of the dishes. Not to throw shade at this restaurant or Japanese restaurants in general, but this is pretty typical mise en place for most fast food/ quick eating establishments around the world.
Damn that's some fluffy Panko! Also good kitchen skills, breading looked perfect, good cutting technique and cleanliness overall is very good as it seems. 👍
If everybody in this kitchen got along very, very well and bonded after service hours this would be a very fun place to work at. I guess it just doesn’t show because of Japanese discipline and dedication to the task at hand.
even though this isn't a fine dining restaurant, any high level kitchen looks like this. there's not a bunch of joking around, everyone has their head down focused on executing their tasks.
@@food_star i'm sure some of the cooks have a few drinks when they close shop or bond over something fun after their shift but i just cant help but imagine what if Everyone got along so well, egos checked-in at the door, were professional and fun at the same time. That would be the ideal kitchen to work in! I could care less if it pays minimum, as long as there is room for growth skill-wise, work wouldn't feel like it and you always look forward to starting another shift the following day. Sorry, im just too idealistic.lol

He pours that huge saucepan out into those smaller containers so expertly, I didn't see a splash or drop fall on the floor! If that would have been mee that sauce would have ended up in my shoes LOLS

I love the fact that they put a different topping on the chicken. A variety of flavors makes for a great meal. I think I could handle one of those cutlets... And the manager 😜

But still canned macaroni and still a mystery tomato sauce since they never show it so probably some shitty canned sauce anyways the video seems cut to just show the "best " parts of the process
Hi-lite is one of the best place to go, especially as a uni student in Kyoto. Guaranteed you will fill have your stomach filled until dinner if you got them for lunch. At times I had to take away the leftover. Hi-lite have a couple of chain stores in Kyoto. I also reccomend the one in Kinugasa area (Golden Temple) near Ritsumeikan University. Definitely reccomending this to anyone who will visit Kyoto in the future😊

Might be grand to make a trip to Japan & eat @ this place, too...but, chances are probably not! Certainly enjoyed watching this video...restaurant is generous with their portion size!
.......you realize it's never going to be over right? Also learning to speak the language even the basics would be a good idea, Japan's a country with a very defined respect hierarchy below the goofy fun surface.
Everyone's talking about the food.... But let's give some recognition to how clean the kitchen actually is. The splash plating on the back wall is spotless. Considering how much food they're frying everyday, they must spend a tremendous amount of time to clean.
