You are so right, Heather! I've been canning for 60 years, watched about half the RU-vid ladies canning their own, seen videos on things I never thought to can, seen videos I prayed they wouldn't kill their whole family with those jars, seen people 4x more careful than me, and hoped they'd stop being so fearful, but I think THIS video is the most important one I ever saw on canning. I don't even know if MY stove is still 100% level! water in a pot, and grease in a skillet seems even enough. Things cook evenly. Cakes aren't high on one side, but 100% level?? I'm going to find out before I make Cowboy Candy on Tuesday.

I love my gas stove with it's big heavy crates , but have had the exact same issue with the feet not fitting perfectly in the grooves , as well as the burner cover not being completely on the burner , which means it won't ignite Thank goodness the unlevel part , hasn't happened when I was canning , but now this happened to you , I will be even more on the alert . THANK YOU , I am so sorry this happened to you .

As a long time nurse, I can't tell you how important it is to trust your gut. It's often been, for me, a literal life saving thing. Yes really, lives have been saved by calling a doctor in the middle of the night. Use your gut for everything! This just proves that it's there to keep you safe. Thanks for sharing, Constance. Constance, I have the same type of stove and had the same thing happen with my grate not getting back right. Thankfully, it wasn't during canning or anything, but it wasn't immediately noticeable.

You had a day where everything was in question. At least it was done day of all of this at once for you, and not something this day and something the next day and then the next. I'm glad your canner didn't run dry.

We really prefer the texture of presoaked beans when canning. So sorry about the canning failure...thanks for sharing. It's so important to learn that bloopers and failures can happen to everyone.

Oh gosh, thats exactly what Happened to me yesterday canning in my AllAmerican 930. It was taking so much time to come up to pressure. I figured my entire bottom layer of meat sauce was going to be scorched badly. What happened is the bottom layer ALL 7 JARS SIPHONED. The top 7 were fine, and all of the jars sealed properly. It was the weirdest experience I've ever had! Thanks for sharing. Now im going to check out my burners before putting that big load on there.❤

This is So important. An uneven gas stove can over time build up dirt and wear up in your jets. Dirty jets can cause a sudden burst of highly dangerous flames. I'm talking like a flame thrower. I know because i rented and it was in an old house, old stove and it almost set me on fire! Level the stove and clean the jets! It will save your life! No joke! Thanks for posting this Constance❣️

I think it’s good to share it all. Someone will learn from it. I did just the opposite when measuring dry beans. I didn’t check the chart and overfilled. Of course the beans swelled more than I expected and every jar siphoned. A Lot! We ate them but they were some dried out beans even with adding liquid when heating. Oh well.

I had that same problem about 15 years ago when I purchased a new stove. I learned the hard way that the feet on the stove were unlevel but only about an 1/4 inch. Lost 20 pints of chicken. Thanks for sharing because this is something I have never mentioned in canning videos. I will next time I do a video.

Hey! Glad you posted this. Once I followed another YT with canning beans… but I changed to black beans… the Amt did differ…thus they buckled the lids. It’s a learning lesson. I did not check the NATIONAL CENTER FOR FOOD PRESERVATION like I should have. Sometimes we learn the hard way. Thankfully no one was harmed. The Book is on my counter ALL the time now.

Mine isn't level😳. I've only done the pressure canner for bone broth and maybe corn. I have used the water bath mostly. So glad to see this because I really wanted to pressure can this weekend. Something told me no last weekend. Time is scarce. Wondering, maybe that was why I didn't get the jiggle I expected. I just assumed it was because of a glass top.

Thanks for this video. Sometimes when I am canning I get in a hurry. Nothing has ever happened, but this reminds me that with something like canning I need to stop and follow each step to make sure that everything is the way it is supposed to be. I have had jars fail and every time it has been operator error. I am glad that you did not have to end up getting a new canner.

Oh my goodness! I've never heard of that happening but it makes so much sense. There's so much truth to statements about how much you learn from experience and that you never stop learning. Thanks for sharing so we can learn from your experience and I'm so glad it hadn't boiled dry on you. It still sucks to spend all that time canning (my AA takes quite a while) and have it wrecked.

Wow! I am so glad to see this. Nothing in my home is level. Especially not in my kitchen. I have had issues with my small pressure cooker burning or quickly running dry. Now i know what’s going on. I didn’t know beinf level was important. Thank you!

There would be makers out there who would have covered this over, and kept a false front...but you had the guts to face up, and teach us all. You didn't have to, but you chose to. This is an important video. Some one once said to me, "hurry up and slow down." At the time, I had no idea what she was saying to me, but I learned. I'm glad you didn't ruin your canner. I have an All American canner as well, and they are expensive! One thing I never thought about was the emergency pressure plug. Apparently, it needs to be checked yearly regardless of how much canning is actually done. I always checked it, but I never took into account how the plug could become dry and crack. Then I heard from a fellow canner how her emergency pressure plug broke and she had hot steam all over her kitchen. It is only by G-d's grace that she wasn't standing over the canner when the gasket/plug blew. Now I replace this plug yearly regardless. Apparently this is true of all canners, not just the All American. Be well!

I have nearly 50 years of canning experience. I have a lot of memories as a child helping can outside in a washtub on an open fire. Even with years of canning experience I'm still learning. I have had my share of mistakes however I always try to find the positive in the negative. What can I learn from my mistakes? A mistake can be very disappointing but a mistake is only truly a failure if we fail to learn from our mistakes. Thank you for sharing.

Glad you shared this video. I ordered mine during covid and it was $359. It took 6 months or so to get it. They had gone up like $50 after that, I have the one that you can do 14 qts.

I noticed a lot of people commenting on outdoor stoves for pressure canning, if you use a turkey fryer type burner or a commercial stove top use caution. These burners put out a lot of heat and can damage your AA canner or any other brand. Please don't be in a hurry and turn up the heat high to get to temp you can pit the bottomof the canner. Bring it up to temp with a low flame. I learned the hard way with my comercial stove and my AA canner, I turned up the burner high to bring it to venting stage after doing that with a few batches the bottomof the canner looked like the surface of the moon. $110 got me a new base that fit the lid perfectly. Now I bring it to temp slower and no problems with pitting.

Thank you for a great teaching video. My canning is done outside on a gas camp stove. My husband always helps me set up. He makes sure my stove is level and adds boards and shims to make it level. Say a prayer for me in a couple of weeks I'll be doing a demo of black beans. A dear coworker asked me to do this. I am nervous and excited.

I have a gas stove, with cast iron grates on top. Each corner of each of the grates also has a tiny "foot" on it and they sometimes pop off while cleaning. If one pops off the grate then becomes wiggly and unstable. Something to look/watch for if you have grates on top of your stoves.

I had a similar experience with my All American canner, also canning navy beans, except my mistake was a lid that wasn’t on straight. Steam started coming out from under the lid, the canner got to the proper pressure on the dial but the jiggler didn’t jiggle. After letting the canner cool down, reseating the lid, and reprocessing the beans, I ended up with all jars failing to seal so into the freezer they went. I cleaned the canner well and also replaced a few parts (my canner is 30 years old). No more problems. Thanks for your informative videos! God bless!

Thank you so much for sharing this! We just had a gas line run to our kitchen so that I can purchase a gas stove and a pressure canner. This is great information since I have never cooked on a gas stove. Also, I am glad that you didn't ruin your beautiful All American Canner!

Thank you so much for this info. My stove was installed by the company I bought my stove from. We put the level on it and found it is way off and not level at all. I never would have thought about this. I do not even remember seeing them level the stove when it was installed. Live and learn, thank you again for the tip

I have only been pressure canning for 2 yrs with a 921 All American. I found it really frustrating to get the lid on level. So, I measured the gap in the between the seated lid and the canner. I made spacers to keep the lid level until tighten the toggles. I also use my camp stove to do my canning. Thanks for the video.

I'm so glad I saw this. My digital canner just quit. I've never used my other one. I was thinking about it, but I hadn't thought about this. My floor isn't perfectly level, so my stove probably isn't either. I need to make sure to level my stove before canning!

Thank you for sharing this info. It's vital since there are so many beginner canners out there these days. I didn't realize how important a level stove is either! It also speaks to the importance of following the tested recipes for canning beans. I just realized that's why they say to soak overnight and parboil 30 minutes prior to canning; by then, most of the swelling has taken place and you can know exactly how full to fill your jars.

Hi Constance, :) Thank you for a really honest video that I know will be helpful to more than one person out there at least. As Kneady Homesteader said, It's a very important topic and I hope people are watching and that the ones watching do some sharing and passing along the info. Those canners are very expensive ( I can't afford one of those right now) And people need to know what to look for and what can happen. This isn't something in the instruction book. This comes with user knowledge, and we appreciate that we could learn from you instead of the hard way with a very expensive mistake. Thanks much :)

Oh my gosh!!! This almost happened to me but I realized it in time!! The grates were backwards causing everything to be uneven !! I’m so sorry this happened but it could have been worse! Thank you for sharing this !!
