3 things with the queso: the can of green chiles are anaheim chiles that have been almost pickled. They bring a bit of heat, but mostly bring a sharp tang. I also think that Antoni used a bit of white American cheese because it has emulsifying salts that make a cheese sauce like a queso beautifully melty and stringy. And based on the wording in the recipe, and the dish's origins, you needed to use Mexican chorizo which is a fresh sausage that is able to turn into crumbles in the pan rather than Spanish chorizo which is a cured sausage that will never really break down like the picture shows.

The closed captions think that Mike is called "Quinn" where the boys say "yes queen". This is my best thing ever ever ever ever ever.

There’s this Italian cookbook it’s called “Artusi: the art of eating well. An Italian cookbook”. It’s huge and veeery traditional Italian recipes, its been written at the end of the 1800s but it’s still considered the bible of food in Italy. Artusi, the author was born in my hometown in Emilia Romagna, Forlimpopoli, and it’s a tradition for mothers to buy that book for their daughters when they get married and I think it’s super sweet. I already know it’s super good but I’d love for you guys to review it. It’d be fun to see you guys deal with really traditional Italian stuff 😏 Also, the face James made when Barry told him to shut up cracked me up. He was so offended 😂😍

I had just finished reviewing this book, hands down one of the best episodes so far. My three favourite members of sorted in one video! No ego, no pretension, just three down to earth guys doing what they do best. Well done guys! Now I am off to Amazon to buy Antoni’s book.

In North America we have “green chiles” that come in a can. They taste similar to onion or garlic and have very little heat in them. I think those are the type of green chiles Antoni is referring to. I wouldn’t be surprised if they are hard to get in the UK. They may also be referred to as “hatch green chiles”
