Those mullet are tricky customers. I tried catching them in a harbour in northern Spain. They took free offerings almost as soon as they hit the water but knew which one had my hook in it. Got some great looking bites but in the clear water I could see them pushing my bait around without opening their mouths trying to free the bait from the hook before eating it. My mate Kevin eventually got one by throwing in a handful of free offerings and free lining a bit of breadflake amongst them. Several locals watching us were amazed - not sure if it was because he actually caught one or because he returned it to the water afterwards.
