✅ Shortcrust pastry

◽ 2.5 cups of wheat flour type 450-550 (375 g)
◽ 200 g of cold butter
◽ 3 egg yolks (L eggs)
◽ 3 tablespoons of powdered sugar (20-30 g)
◽ 2 tablespoons of sour cream 18%
◽ a pinch of salt
◽ 1 teaspoon of baking powder (5 g)
Bake for 20-25 minutes at 180 degrees C, top-bottom heater, without convection (165 degrees C with convection, if you don't have the option of baking without).
✅ CREAM
◽ 1 liter of chilled cream 30%
◽ 500 g of sandwich cheese (your taste, Philadelphia) or mascarpone
◽ 3-4 tablespoons of powdered sugar (to taste)
◽ 150 g chocolate sprinkles or milk (dark) chocolate
◽ 6 teaspoons of gelatin (30 g)
