Cran-Apple Pie
Crust:
2 cups all purpose flour
1 cup cake flour
3 TBS sugar
1 1/4 tsp salt
1/2 tsp baking powder
8 TBS lard, cut into cubes
8 TBS unsalted butter, cut into cubes
1 large egg yolk
10-12 TBS ice water
Filling:
5 cups thinly sliced peeled tart apples
3/4 cup plus 2 TBS apple juice
3/4 cup sugar
3/4 tsp cinnamon
1/4 tsp salt
1/4 tsp nutmeg
3 TBS cornstarch
2 cups fresh cranberries
Egg wash:
1 large egg slightly beaten
1 TBS 2 % milk
1. In a large bowl, combine flours, sugar, salt, and baking powder; cover and freeze 30 minutes. Place lard and butter in a separate bowl and freeze 30 minutes. Place flour mixture in a food processor; pulse until blended. Add lard and butter; pulse until mixture is pea size.
2. Transfer flour mixture into a large bowl. Mix the egg yolk and 10 TBS ice water; gradually add to the flour mixture. Toss with a fork until dough holds together. Divide into thirds. Shape into a disk; refrigerate at least 1 hour.
3. In a saucepan combine filling ingredients. Bring to a boil. Stir constantly. Cook until thickened. Remove and cool to room temp.
4. Roll out dough and transfer to a pie plate. Pour in filling.
5. Roll out another portion and make a lattice crust. Use the remaining disk for decorative cut outs.
6. Bake at 400 until bubbly and crust is cooked.
