Hello lovelies! Today we have an incredibly fulfilling feast for both your eyes and your belly 😅
We have not one, not two, DEFINITELY not three, but FIVE recipes in variety from our beloved Antakya (Antiochia). We're gonna be starting with red pepper flatbread, a recipe we're sure most of you have not heard of but will definitely enjoy surprising your loved ones with for many years to come. Then, we're going to be mixing in a delicious green olive salad, and continue on with a beautiful tahini tarator, followed up by our favorite hummus recipe! Last but not least, we're going to be making tepsi kebabi, or tray kebab, a specialty from our beloved Antakya for our main course 😍 Enjoy today's video and don't forget to let us know what you think we should be doing next! Red Pepper Flatbread (Biberli Ekmek)
7 lavash bread (tortilla or any flatbread works great)
200 gr white cheese, diced (also known as feta)
1 onion, finely chopped
3 tablespoons pepper paste
2 tablespoons nigella seeds
2 tablespoons sesame seeds
7 sprigs of thyme
15-20 green olives, pitted and chopped
4 tablespoons olive oil
• Preheat your oven to 220C (430F).
• Combine and crumble the white cheese and the onion in a bowl.
• Add the pepper paste, nigella seeds, sesame seeds, green olives and thyme. Pour in the olive oil and mix all the ingredients together.
• Let it rest for a while so that all the flavours can combine.
• Spread a full tablespoon of the mixture on the lavash and place it into the bottom of the oven and bake for 2 minutes. Then, transfer it to the top rack of the oven and bake for another two minutes.
• Your delicious and simple pepper bread is ready to enjoy!
Green Olive Salad (Zeytin Öfelemesi)
250 gr green olives, pitted
3 sprigs of spring onion, finely chopped
15 sprigs of parsley, finely chopped
3 tablespoons pomegranate sour (can be sold as pomegranate molasses or syrup but the it should taste more sour than sweet)
3 tablespoons olive oil
½ teaspoon chilli pepper flakes
1 handful of pomegranate seeds
• Put the pitted olives in a bowl.
• Add the spring onion and parsley.
• Then add the pomegranate sour, olive oil and pepper flakes and mix.
• Transfer to a dish and top with pomegranate seeds.
Tahini Tarator
50 ml tahini (4 tablespoons)
50 ml warm water (4 tablespoons)
2 cloves of garlic, smashed
1 handful of walnuts, finely chopped
1 lemon
2 sprigs of parsley, finely chopped
• Put the walnuts and the garlic in a bowl; pour the tahini and water over it.
• Squeeze in the juice of the lemon and whisk until the texture becomes creamy.
• Sprinkle the parsley and it's ready to enjoy with a piece of bread or to uplift your meat dishes as a dip.

Hummus 400 gr canned chickpeas (~14 oz, ~0.9 lb) 6 tablespoons tahini 1 lemon 6 cubes of ice 2 garlic cloves 2 tablespoons extra virgin olive oil ½ teaspoon salt To garnish: Ground sumac Ground cumin 2-3 tablespoons extra virgin olive oil Parsley, to decorate • For a perfectly smooth hummus first you need to peel the chickpeas. Add 400 gr canned chickpeas in a large bowl and rub to take the skin off. • Fill the bowl with water and the skins will start to float. When you drain, the skins will group on water and it will be much easier to collect. • Add peeled chickpeas, 2 cloves of garlic, half of a teaspoon salt, 6 tablespoons of tahini and 2 tablespoons of extra virgin olive oil to food processor. • Squeeze a lemon juice and run for 7-8 minutes on low-medium speed. • While the food processor is working the hummus will heat up. To avoid that add 6 cubes of ice gradually. Ice will help to make a smooth hummus as well. • After a couple of minutes the hummus will be okay but not smooth enough. Don’t give up and continue until the hummus is creamy. You can run on high speed at this stage. • Taste and adjust the lemon, tahini and salt to your taste. Garlic and olive oil always need time to settle. If you leave 2-3 hours before eating the taste will improve. • When the hummus is ready, make a little crater with the back of a spoon. • Sprinkle ground sumac, cumin and parsley leaves. Last but not least pour 2-3 tablespoons of extra virgin olive oil. • Enjoy your creamy, tasty, simple hummus with lavash or chips as your spoon! Tray Kebab (Tepsi Kebabı) 500g ground beef, single ground (alternatively, lamb meat or a combination of beef & lamb) 1 green pepper, very finely chopped 1 red pepper, very finely chopped 1 onion, very finely chopped Half a bunch of parsley, very finely chopped 4 cloves of garlic, smashed 1/2 teaspoon salt 1/2 teaspoon black pepper 1 teaspoon cumin To garnish, 1 cup water 2 tablespoons pepper paste 2 tomatoes, cut into chunky wedges 5 green peppers 2 red onions, cut into chunky wedges 3-4 lavash bread • Preheat your oven to 280 C (535 F). • Mix the green pepper, red pepper, onion, parsley, garlic, and the ground beef in a large bowl. • Season with the salt, pepper and cumin. Knead it until all the ingredients are combined. Wet your hands occasionally while kneading to prevent any stickiness. • Oil a round preferably copper tray and spread the meat mixture on it evenly. Round the edges with a wooden spatula. • To make the sauce, mix the pepper paste and water. Spread it onto the meat mixture. • With the back of your knife, you can roughly slice and portion before baking. • Top with the green peppers, red onion wedges and tomato wedges. • Place the tray into the oven and bake for 20-25 minutes. The magnificent kebab is ready scoop up with your lavash!

Hi!!!I'm Greek and live in Italy with my Italian husband and three children.So our way to cook is Greekitalian and its very interesting .Turkish and Greek people have many similarities. I like you for your open mind way of thinking ,you are fantastic!!!

Definitely, Greeks and Turks almost have the same taste of foods. I was in Athens last year and had some delicious meaty eggplant dish and salad, it couldn't get better then this.

I made the tray kebab for dinner last night and it was amazing. My husband went nuts for it. He had been craving Mexican food and said this was better. I used tomato paste and Trader Joe’s harissa for the sauce. Thanks and keep the recipes coming.

I am from Antakya (Antiochia) and there we speak Arabic and Turkish because the city is just next to Syria. A lot of the food we have is a mix from the syrian and Turkish food. We have Syrian spices that’s the difference between us and the „normal“ turks

I love both types of videos. Perhaps this format is best for highlighting some of the most popular dishes in each region/major city in Turkey? And more in-depth videos for specific dishes. A mix of both would be great!

Keep bringing us the great everyones foods your cooking in Turkey. I like the ice cube trick for the hummus. But I prefer to use the liquid from the chickpeas so I'll have to get some in the freezer.

Hi Refika! This is your first Recipe OFthe 2021.I like all of Recipe THEY ARE delicious. actually that thyme tastes almost identical to the standart thyme available on market, you might be able to find the thyme in the recipe on high places, like mountains or highlands. It's more likely a wild thyme.Nevertheless, if you use the standart thyme , it's ok.

Having some of these videos is awesome. When you show us lots of dishes, the your fans can ask for specific directions. If you don't show us videos with lots of dishes, then we don't know that those dishes exist. So...do some of these videos once a month of so. Hope this helps. This video was YUM!!!!!!! Don

Thank you so much, Refika. You are so right: Good dishes are prepared, whereever you can find the ingredients therefor. The names of the dishes are different, but the tastes are similar. Mostly I cook Iranian dishes, but you can find the same or similar dishes in all countries of Middle East. And everybody will say, that he has the original recipe ;-))

Amazing, thank you. And very easy to follow. I am Polish and love spicy food hehe which is not in my culture, i love chilli, coriander. When i make Polish borsch beetroot soup, i ad ginger ,chili and coriander and garnish with sour cream, Polish fusion.

I love the detailed episodes, but this is a very interesting way to present a group of specific foods for the different regions! I’m in Canada, and our country is like this too - a lot of foods in common, but then each province and territory has their own dishes and style that makes them unique. So I love to see the regional differences! Please keep this series coming!
