Oh, my. I just made this, but without frosting it, and it is SO good! I might even cut down the sugar and butter a little bit as it is very rich. It is buttery, and a little crunchy, and would be great with vanilla ice cream! It is too much for one person though, and especially for a compulsive eater. I either need to cut the recipe in half, or wait until I can share it with someone. I know, I know, I could try freezing it. But I know me, and that won't stop me from binging on it. It would also be good with a little fruit in it, maybe pieces of apple? Or raisins? I also put more cinnamon in than was called for. It really satisfied my cinnamon craving. Pardon me, I need to go have a sugar nap now. Thank you for this!

Hello, I tried this with self-raising flour,( because that is all I have), still added a small amount of baking soda, used 1/2 & 1/2 mixed with a few drops of white vinegar. I turned out so delicious. Thank You, Many Blessings 🙏 Stay safe, remember God is in control!

Gemma I have been baking for years but I have learned so much from you with microwave mug meals and 3 ingredient cookies and ice cream and frozen yogurt I have a dough recipe for but rolls that instead of yeast or baking soda or baking powder I use white vinegar and for years it has been fool proof but I thank you for your alternatives

Six well muffin pans work well for small batch baking, then store leftovers in my fridge for the next day. Mine aren't sweet but are very flavorful---which reduces the risk of eating them all in one day.
