José Andrés, James Beard Award-winning chef and one of the world’s 100 most influential people according to Time Magazine in 2012 and 2018, serves up gazpacho in the MUNCHIES Test Kitchen.
Not only does José outline a versatile gazpacho recipe, but he also shows us the importance of talking to your ingredients and using care as an essential ingredient in this quick and easy recipe.

This is the BEST video I have ever seen on Munchies! So funny, so informative and even a bit philosophical :) I was never a fan of gazpacho, but chef Andres has convinced me to give it another shot - especially with those little tomato seed caviar things! Describing it as a liquid salad instead of a cold soup is a good idea.

With all due respect, José Andrés, your wife is right: the traditional (tomato) gazpacho is made with no bread. In salmorejo, the bread serves two purposes: to recycle dry bread and to make the dish heavier, thicker, more filling and rich in calories. But gazpacho is a drink, meant to provide workers with water and mineral salts that they lose in the work under the harsh sun of Andalusia. That's why you add water to the gazpacho and you definetely do not add any bread. Of course, you are free to introduce any change you wish to, but then it is no longer a traditional gazpacho. All the best from Córdoba.
@ascarius
@ascarius 4 года назад
I am from Sevilla and most people I know add a bit (a lot less than when you make salmorejo) of bread to gazpacho
@ascarius
@ascarius 4 года назад
And... gazpacho is a cold soup... you can drink it (on a deep plate like you will do with any hot soup) but you can add solid toppings and eat it... it is what we call “sopeao” Gazpacho it is a traditional dish with so many ways to make it and to eat it as number of families there are
@cesarantonioenriqueramirez
@cesarantonioenriqueramirez 4 года назад
In my family gazpacho is always without bread and we drink it from a glass. No soup, it's a drink. With ice cubes if possible. It's meant to be refreshing. I know it's made in a lot of different ways, but in my opinion it kinda makes no sense to add bread. It just becomes a soup indeed
@papakabanpur395
@papakabanpur395 3 года назад
In Cordoba I ate the best Gazpacho but it was thick not thin like a drink. It also is traditionally served with jamon and cheese as far as I know. Tradition may change with time
@ramonlg21
@ramonlg21 3 года назад
@@papakabanpur395 Everyone here has his/her own way of making it, but if you ate it in a restaurant chances are that you ate salmorejo, not gazpacho. As for the cheese, I have never seen it (I have lived in Córdoba for 45 years), but of course there is no law about it, I am glad you enjoyed it!
