It doesn't sound like there's any time of the year that there aren't crowds in Florence. It's a pity, as the crowds, noise and shopping make for an unpleasant experience. But tourists love amusements parks of any kind. especially those that have a cachet associated with them.
You are right! I think the less touristic time is winter, and in the morning, then you get to see the true town. Have you seen my video on Cortona, which I traveled in Winter + Morning.
