Home made Iskender Kebab
Ingredients List:(for 4 people)
600 gr beef steak
Two large pitas
A bowl of yogurt
Two tomatoes
Two green peppers
125 gr butter
Salt
Black pepper
Olive oil
For the sauce:
Two tablespoons of butter
Two full tablespoons of tomato paste
Three cups of hot water
Salt
Pepper
Cumin (if you like)
Preparation:
We cut our meat thinly on the cutting board. Then I spread baking paper on the counter. I sprinkled salt and pepper. Then I lined the meat slices on it. Sprinkle salt and black pepper again, according to your own taste, not too much. We heat the pitas with the tips as I show you in the video. For the sauce, after melting and frying a pan of butter, add the tomato paste and fry it with a little tomato paste and then add hot water. We add salt, black pepper (and cumin if you like) and boil it until it gets the consistency I show in the video. We chop our breads and take them into serving dishes. We turn the heat high and start lining the meat slices leaving spaces in between. We cook them flipping without drying them and take them all into a plate. When our preparations are completed, we first pour tomato sauce on the plates. We distribute into the dishes, pouring it over the meat slices. We put yoghurt, cooked tomatoes and peppers on the side and finally serve it by pouring fried butter on it. They really taste good. Health to your hands. Enjoy your meal.
Post Script: I asked for a specific part of the beef from the butcher. I wrapped it in stretch film and put it in the freezer. I kept it there for 5 hours and then took it down to the fridge and kept it for 2 hours. Then I put it back in the freezer for half an hour. Why did I do such a thing? So as to cut the meat easier. If you want, you can also cook it from steak.
