This was very interesting and I loved watching it. I worked at KFC for 4 years in the late 90's to 2000's and most of this was similar... We had 3 variations of twisters and 3 different chicken sandwiches plus the 3 types of chicken back then. Plus I was in Florida so things were similar but a bit different as far as the menu. My location was crazy clean and we prided ourselves on that. Per @naitoman we only wore cut proof gloves because, well you can guess why but he's right wearing normal gloves was a bad idea. We had the pressure cookers, rotisserie, and deep fryers and we spent a lot of time cleaning them. We used huge blocks of shortening in the fryers and we switched it out periodically between adding an additive to extend its life. Honestly, after spending many years learning things, becoming an architect and going through MANY kitchens, I would say KFC held pretty high standards where I was and the workers prided themselves being part of it. Again just my experience but I learned a LOT form working there. So thank you for the video!
Gloves are a waste of rubber. Food workers wear them, then they touch money, the broom, the door, etc. Just work with you bare hands and when needed, wash them.
Ok, they dont need gloves necessarily for this step of making the chicken. The franchise can instill policies and procedures if they'd like but as far as health department concerns, gloves aren't needed for that. Once the chicken is cooked, different story.
*If you are not a KFC worker, dont be mean to us we work hard at the back in every shift and try to smile thru our physical hard work 💓* we are human too From KFC worker :)
Kyle Lopez that's good, it's different for everyone. Some people find KFC work shifts hard as a teen and there is a lot of rude customers out there so I wanted to spread this lol hope you earn a lot of money sorry to trigger you lmao
I worked at one in the 1970s. We had a breading machine and did not have to do it like this. Also had 6 pressure cookers. The chicken in pieces came in bags and you had to break by hand some pieces or they would not cook properly. The mashed potatoes and gravy were made instant from packets. At the close if there was any chicken that was unsold, we could take it home or we had to throw it away. Btw the breaded coating came in unmarked bags with no ingredients on them. At that time there was no crispy, they were putting in the fryers for that when I left. Still the best cole slaw in the world.
I worked at a KFC in the 70's. Hardest job I ever had. Was an assistant manager did everything made the chicken salads in 25/50 gallon drums. The chicken was much tastier then and the gravy was made from the real crackling. Believe it or not back then no one want the wings always had left over wings I would take home to my mother because of corse they could not be saved all leftover chicken had to be thrown out usually it was only wings.
We actually still use the crackling at least in my country tho I have no doubt the chicken was better back in the day my mum would tell me how crispy it was and not as greasy but it's not bad after throwing it in the air fryer
I agree. I know people who work at McDonald's, love their job and work hard at it. Not every one can be a lawyer or doctor or any of the ""higher up professions"
In 1974, I worked at a Kentucky fried Chicken for a couple months. As a result, I no longer like fried chicken. On Sunday, this particular franchisee still cooked chicken the original Colonel Sanders way using pressure cookers on top of gas stoves.
I work as a cook at KFC lemme clarify a few things 1. The correct procedure is to not wear gloves when breading unless you have cuts on your hands or have reactions to the flour 2. the dipping water gets bloody yes. because it's real meat. So the water gets changed obviously 3. the cage is not rusty. it's flour that has been burnt onto it and gets cleaned off every night 4. crispy chicken does not need the lid down because cooking it under pressure doesn't make it crispy. anything crispy cooks with an open lid
I disagree with you, gloves must be worn at all times when touching food. And even if they do have cuts on their hands, I'm sure they would still not bother to wear gloves.
Yap.. thats right bro👍🏻 all KFC outlet follows the laws... but the breeding table too many flour on the table... i was 7years working for KFC starting from staff until im be RM (restaurant manager) 😊
Brett Miller If anything, they were harmed during their lifetime before being slaughtered. Some of these poor creatures see death as a good thing the way they are treated alive. They deserve to be treated like royalty since they feed most of us. Then again, human race...
Worked as a Cook in my very first job in 1981, at the 4th Avenue San Mateo, CA location with two of my high school buddies. We used to have to 'break' the frozen chicken thighs before cooking. The whole process was an eye opener. The pressure cookers were scary at first, but nothing compared to the layers of grease on my Nikes each night. This was during the Kentucky Fried Rat controversy in the early 80s.
For months now I been redeeming the buy one get one free chicken sandwich coupons that are on every chicken sandwich receipt. There's no catch or anything just answer the questions and screenshot the number at the end. Usually get one original and one spicy. Helluva deal.
I actually like seeing videos like this. It's good to see how food is handled and prepared at popular franchises. Hopefully this doesn't get taken down by KFC.
@@jonathonrossebo1783 the person breading the chicken wasn't wearing gloves when he should be according to kfc standards, the breading station is too close to the fries station which could cause cross contamination, he didn't wear transfer gloves when putting the chicken in the fryer or taking it out.
Wearing gloves in a kitchen is the same sense of false security as wearing a helmet sky diving... gloves aren't the issue. Regular cleaning of work station and washing hands is what is needed to being 'safe' in the kitchen.
You analogy is silly. The wearing of gloves should be mandatory in addition with all the other good hygiene practices that should take place in kitchens.
The employees should wear gloves especially when you handle any type of meat or fish. I was in a well known national restaurant and had to go to the restroom when I first walked in.when I walked in a I noticed someone was sitting on the toilet while I was washing my hands the person got up from the toilet and went back to work without washing their hands and it was a employee so I asked for the manager and told him what I saw and I walked out of the restaurant.. that's why I don't like to eat out!!
Because it's not only the cooking that is the issue, it is hands touching one surface that may be contaminated, and then touching another surface or your own body or someone else's and becoming contaminated with foodborne antigens. It would help if people would stop being so defensive and look at the big picture. Everyone knows poultry especially is Rife with salmonella and other contaminants that make people very sick. Also in addition to this we the public depend on you to pay attention to food temperatures so as not to allows food to girl pathogens that are going to kill us because we happened to drive through for a snack. This is No Slam against you any of you personally oh, it's just good restaurant protocol.
To tell you honestly! I worked at KFC for 2 years as service crew.. I've been all around the store, been cook, bust boy, food preparation, dish washer, cashier etc... I PROUDLY SAY, KFC is the best and cleanest chicken in the whole world.. upto now I always bring my son to KFC, hot n spicy is my favorite chicken and KFC gravy is the best gravy in the planet!!
@@ladeecruzblinks8539i worked at kfc when i was 18 as a working student, not that hard. if you aspire to be chef, restaurant manager, work in a hotel or cruise ship etc. . I think this is the best place to gain experience.
In my experience my shift went like this - >Suffer >Suffer >Sneak into the coolroom to check my phone >Suffer some more >Walk home completely covered in oil and flour >Repeat again with extra suffering
We were tripping once and happened to walk past an industrial bakery in the early hours of the morning. We stood and watched through a window - amazed - as loves of bread flew along mini roller coasters. Food is fun with acid :)
He didnt come up with the hot & spicy chicken, but yes they arent doing the 7, 10, 7 proceedure, although the colonel probably didnt even make that up.
KFC was always my favorite place to work. I was night cook. I always wore gloves, THO... I took home so much food after close. My fridge was stocked full OF KFC.
sure if Gordon ever make as much money through his restaurants. I am a fan of Gordon n I watch all of his tv series. kitchen nightmares is to help resurrect a dying business. fast food chains have more than what it takes to run their business efficiently.
First job here as taste expert and quality check, damn I gained 20 kilos in 1 year tasting chicken thrice everyday.. left it 4 years ago, but did not lose the weight, thanks kfc🙏🏻
Now, in 2023, I work at KFC Russia, I hold the position of Junior Manager and I see how many deviations in food preparation standards in the restaurant, BUT, really, don’t offend us, we maintain sanitation and do not allow food to be spoiled by physical, biological and chemical items. This work is very hard and we do everything to ensure that each of our guests remains happy, well-fed and satisfied, because your smile gives us a lot of motivation to work and please you further. Junior Manager Makar, KFC Zolnaya, Russian Federation
These guys were all hustling. Say what you want but physically they do a lot of work. People don't think about how stuff gets to them. Like the flour guy who just gets saturated in the stuff day in, day out. Fast Food workers deserve more pay. Yeah anyone can do the job....but can they? It might not take an education but it takes a hell of a lot more in other aspects. It's litteraly "work" and they're contributing a lot to society. Pay them a livable wage. Also for those who are saying it's dirty, it really isn't. It's the cost of doing a high level of business. It's "messy" not dirty. If you want to make an omlette you have to break some eggs. I would eat that food. There's nothing wrong with it. People are so entitled. 100 years ago do you have any idea how much worse the conditions would be? Nobody would use soap. Nobody wore gloves. The chicken meat would be sitting out at room temperature all day with flies around it, blood and guts strewn about. You should be so lucky to live in this time and age.
I understand what you are saying but raising pay will mean raising prices. The mega corp will not take a hit. Also, rents and grocery prices go up. It will not make a difference.
THANK YOU! I made up my mind. I'm definitely going to get my bachelor now. I'm not made for this hard work and low pay. I rather study hard and find myself an office job and slightly higher pay. If I get demotivated, I will watch this video again and remember this is not for me. RESPECT! See you at KFC in a few years and leave a big tip!!!
That was back in 1985. In those years, people had the time to follow the correct procedure. Now a days, fast food in the first place needs to be fast. aka: the customer doesnt want to wait. And offcourse KFC is a big company, so less employee's equals more profit/hour. So more working stress and time pressure for the employee's. AND procedures changes, during the years. Even hospital procedures arent the same as 20 y ago. Thank god for that.
I saw that video too. I wanted to stick that guys face in the grease. Then you have the video of one of 3 fake colonels making chicken. He`s worse than this video. I would like to know what that slop was she was dipping the chicken in before the flour. Its a shame how the colonel got sold out
You don't need gloves to flower chicken cause it gets cooked in 350 degree oil so its fine. Learn about cooking before you worry bout wat process they wear gloves
We wear gloves so the flour doesn't stick onto your hands (and "for sanitary purposes", aka. that's what we've been told to do). I wouldn't wanna get fired over a stupid argument. Also, gloves are useful so the hot oil doesn't splash onto your skin directly, and because we don't wanna wash our hands every 3 minutes after flouring the chicken (the handle of that metal thing needs to be flour-free and clean, just like everything else in the kitchen).
Hi, could I use this video for my college project? I study Filmmaking and I cannot find more videos about working in kfc. I hope you can answer me soon, Thank you.
I spent several year's doing this. Although I was high most of the time, I was confident that I could fry the best quality crispy chicken in the entire city.
I hope she compensated $$$ them for their time and the major inconvenience! If not, that is awful, but this documentary exposes their work conditions and their daily sacrifices they make for society and the big corporations for sure...
Automation so these poor souls don't have to do this horrible mundane shit. Let the machines do this and let the people partake in much higher creative positions, like programming the automation machines and building them. Do you really think people dream of working at KFC? It is so far down on my list I would rather be unemployed and useless bum.
/ void / i dream to work in usa. You clearly dont apreciete what you have minimal wage in east europe avarage is 7 dollars a day. In ukraine its less than 5. Tech cars gas food everythig is expensive here. Dont even wanna talk about health care. The pensioners get 50 to 100 dollars a month after they worked whole their life in the commumist regime. Stop complaining usa have the highest standart of life
I wish that was true here lol. Starts you off at $7.25/hr. Except for Love's Country stop that had a restaurant they start off at $10. Rest is $7.25-$7.50.
Bro it's not hard to cook and make shit, I do it everyday at home, all the people that work in fast food think it's hard work because they probably never cook anything, if you want a hard job, try working in retail, my first job was at Macy's and it was a bitch I was acting nice 25/7 and they make you do more than what you get paid for, shit the bastards don't even pay for your uniforms instead they give you coupons so you could buy clothes at the store that you'll be working in..
Nunca experimentei, faço em casa. Parabéns aos funcionários trabalhar em um espaço pequeno , quente e barulhento mantendo a qualidade do alimento e atender o cliente com sorriso no rosto.
You don't need gloves when the meat will be fried for 15 minutes at 277° trust me, for the tacos the guy wear gloves and not for the chiken, don't worry :)
+EpiiDemiic89 yep, its not just about the germs, I am sure, hair gives a special taste to it as well... I did already have the pleasure finding tiny hair in my chicken... Never again
More big food providers should actually do videos like these, food transparency, letting us get an insight. We as the general public are to trusting when it comes to big brands
Wow, this brings back memories; I used to work at a KFC in Pittsburgh YEARS ago and I was a bomb cook and my workstation @0:04 NEVER was this sloppy...sheesh! Oh and the colonel's secret recipe? Nothing but a big old bag of salt and pepper! 🤣🤣😆😆😂😂🤷♀🤷♀
I've tinkered with the *original* recipe and compared it to modern KFC. It's not even close to the original. I consider @Darnell Miller's assessment pretty accurate assessment of the current KFC recipe. Even Harland Sanders (the Coronel) was bitching about the company changing the recipe not long after he sold it in 1964. I'm one of those super-tasters, and can get pretty close to restaurant flavors on my own original recipes. The current KFC Original Recipe is pretty well summed up as salt/pepper (predominately WHITE pepper), and MSG. Out of the original 11 herbs and spices discovered and revealed in recent years, none of the others really stand out, except perhaps a pinch of ginger. That leaves about 6 or 7 that really don't make a notable difference to the modern taste of KRC. I bet if you served up Harlan Sander's original recipe to today's to devoted KFC customers, they'd probably say, "what the hell did you do to original recipe?" Ironic.
@@unknownquantity4440 Sanders could've killed them for what they did to the brand after he sold it, he was furious however spice brand marion-kay spices offers a seasoning called 99-x which is confirmed to be EXACTLY THE SAME AS SANDERS ORIGINAL BLEND. he gave the recipe to them as a F you move....and I brought some....changed my fried chicken life.
Well you see, Trevor is pissed because Landis got the extra two pieces of chicken, and Trevor got two less, so Landis made a deal with Trevor to give him his two pieces, now Trevor's fucking Landis but Landis fucked Trevor considering he paid for the two pieces in the first place, so you might wanna have a chat with Rendijs Bertulis js.
You know it's actually better than I thought, they dont have them in tubs, they have them in their own space, basically hard to cross contaminate, also just in general the fact they use spaces makes it feel a whole lot nicer about what you're eating.
Hey, before I started working here I thought everything was frozen. One of the main reasons i turned this into a project is because i wanted to show that the cooks back there didn’t just stuff frozen chicken in the fryers. They did so much more. Glad you enjoyed the video!
@@ctejeda92I didn’t know KFC also sold fish 🐠🤔 I’m anaphylactic to seafood and now I’m concerned about going there to eat. I stopped going to Popeye’s because they sell fried shrimp and the chances of cross contamination are there. Do all KFC sell fried fish? I hope not or I’m screwed 😢
I'm sure you can touch the outside of the container, just not the inside or the actual cooked food. Not too sure though as I work in a meat market and I always wear gloves if something is cooked.
Oh man I remember the night I got asked to wash dishes cause our store didn't have a dishwasher for the night. I had to wash all that stuff and the buffet stuff I only had to do that once thank goodness. This was taken awhile ago they don't use styrofoam containers anymore. I worked at our KFC buffet for about four and a half years.
Wait you guys have dish washers? 😐 we have to clean shit by hand every close, i struggle to finish on time, shift ends at 11:30 and i’ve been there until 2am some nights, i’m also not very good at opening the store tho 🤣 been here for 7 months too 😅🤣
so the procedure for crispy is water, flour, water, flour. can someone who worked there tell me how the chicken is marinated and what main components are inside the flour? i dont mean the spices but more for example is there egg powder, starch powder...?
